This year my zucchini crop in my garden was just completely out of control! I had SO much zucchini and was pulling more out of the garden each week than I could use and give away. And with that wonderful problem comes the need to find new ways to eat zucchini, such as this Walnut Raisin Zucchini Bread. Zucchini bread really does not have much of a vegetable, health-food taste to it, so it is still passable as a regular bread for any picky eaters out there. I love the little flecks of green from the zucchini rind, it makes it look so pretty! Want to hide the “green stuff”? Just peel the zucchini before shredded and it will completely blend in. No green in sight.

It is very important to get a lot of the moisture out of the zucchini, otherwise it will end up in the bread and the batter will be too thin. I grate the zucchini first and let it sit in a strainer while getting the dry and wet ingredients together, then squeeze and squeeze it to get as much moisture out as possible. Putting the shredded zucchini in a clean towel is the best way to do this. Gather up the towel ends and wring the zucchini “ball.” It does not have to be completely dry, just get the moisture you can out until it does not seem overly wet!

The first cake I made was the Chocolate Zucchini Apple Bread. Chocolate and zucchini seem to be a crazy combination for some people, but think about all those chocolate coated fruits you’ve indulged in: apples, strawberries, bananas, pineapples, just to mention a few; and all those chocolate coated vegetables: carrots, French beans and chillies, just to mention a few. I think chocolate goes with anything and everything.
To this Zucchini Raisin Bread, I added some sultanas. You can add any dried fruits, like dates, apricots, candied peel, currants or whichever fruit you dream of. I have no boundaries when it comes to cooking. How else will one know if something is good unless you try it? Did you ever hear the quote: “one man’s meat is another man’s poison?”. When I first travelled to Ghana I ate this nice and spicy soup thinking it was some sort of goat stew, but I was later told it was the grasscutter soup. Oh yes you must be wondering what ‘grasscutter’ is. I wondered too, It’s some sort of unusually large rodent found in the tropical rain forests. Human beings eat all sorts of things; it just depends on which corner of the world you spring from. Please always remember to assemble all the ingredients before you start baking. Preheat the oven to 350°F (180°C) and grease an 8½” x 4½” loaf pan with oil or nonstick cooking spray.
Bake for 60-75 minutes, or until a skewer inserted into the centre comes out clean. Let the loaf cool in the pan for about 10 minutes before turning out onto a rack to cool completely. (1 baked 65 minutes)
I slathered some butter on a warm slice. It was delicious but I felt very guilty later on (LOL). I haven’t had such good luck with zucchini this year. My plants were loaded with flowers early on, but maybe the bees were to busy in my lavender and missed the pretty yellow flowers of my zucchini.
Whatever the case, I still managed to bake a great loaf of zucchini bread and since TIHIC has never had a recipe in its index for zucchini bread, I thought I’d pass this one on.
Manservant and his buddies managed to make a dent in this giant loaf several Sunday mornings and all proclaimed it to be quite good!
Healthy Zucchini Bread
First you need zucchini. Though I have used large zucchini I prefer the smaller ones, because they are seem to have less water and definitely not as many seeds.
For this easy zucchini bread, I grate them by hand. It really isn’t hard and doesn’t take but a minute and this way I don’t need to wash my food processor.

In your mixing bowl, combine the zucchini, oil, eggs, sugars, zucchini and salt. I use canola oil, because it has no flavor, but if you prefer the taste of olive oil, that works also. As does butter that has been melted and cooled.
Spiced Zucchini Carrot Bread
Now it’s time to add in some flavor. Zucchini on its own doesn’t have much. I think that is actually it’s redeeming quality. You can make it be whatever you want.
I love cinnamon in this recipe, but cardamom, can be substituted as can pumpkin pie spice. And if you aren’t a cinnamon fan, no need to use it at all. The same goes for nutmeg.
Now is the time to stir in the toasted walnuts and raisins. I love the flavor and texture both give to this loaf, but they are totally unnecessary if you just want a straight up zucchini bread!

Spoiler: This easy zucchini bread does taste better the longer it sits. I liked it more after I had frozen it and then thawed it. So don’t be tempted to slice into it until the next day!
This not too sweet bread, may be my best zucchini bread ever. Except of course for those I add chocolate chips, too.

Yes, you can add chocolate morsels if you’d like, but I was trying to keep this on the healthier side-after all wedding day is approaching.
