Pão de Queijo, which means “cheese bread” in Portuguese is also known as Brazilian cheese bread. It is a small, baked cheesy roll and a traditional Brazilian recipe that is a popular snack and roll in Brazil.

If you have not tried Brazilian Cheese Bread before you are missing out! I have never had such a light a fluffy piece of bread before trying these! This airy, stretchy, and cheesy bread will melt in your mouth and you will no longer look at cheese bread the same.

When you first make this Brazilian Cheese Bread, watching them puff up in the oven may remind you of a science experiment you did at school growing up. This thin batter you create almost explodes out of the mini muffin pan creating these little Brazilian Cheese Puffs!

One thing that makes these little cheese puffs different is that Tapioca Flour is used instead of all-purpose flour, which gives it that extra bounce. Another great things about using Tapioca Flour is that it makes this pão de queijo recipe Gluten Free which is always a win.

Pão De Queijo (brazilian Cheese Bread)

Place all the ingredients into a blender. Pulse until the batter is smooth, use a spatula as needed to scrape the sides of the blender so that the batter is mixed well.

When making this dish it is important to use at least 2 types of cheeses but no more than 3. Here are some common combinations for this recipe:

Sharp White Cheddar and Parmesan: This is the pair that I used for this recipe and I love how bold the flavors are.

Because bacon makes everything taste better. If you are wanting to add these in I would put in 1/8-¼ cup based on how prevalent you want the bacon to be in the cheese bread.

If you are looking to add in some major flavor to this Brazilian Cheese Bread recipe, consider adding in your favorite herbs and spices. I have used garlic, rosemary, even paprika for a hint of spice so feel free to use what you like and make it your own! When adding I have used 1 – 2 teaspoons of herbs and spices and you can base it on how strongly spiced you want your bread to be.

If, and that is a BIG if, but if you have any of these delicious Brazilian cheese buns left over then you can keep them in an airtight container on your counter for a couple of days.

If you are not serving them right away I would make the batter and keep the batter in an airtight container in your fridge which can last up to a week and then cook up a batch right before you want to serve them, so they are fresh and hot out of the oven.

Long live pao de queijo! Or for all you other non-Portuguese speakers like me, Brazilian cheese bread. Easy Brazilian cheese bread. Gluten-free, easy Brazilian cheese bread. Delicious gluten-free, easy Brazilian cheese bread.

He spent a couple years living in Brazil and doesn’t want to brag, but would like me to state, for the record, that he still considers himself (15 years later) a pao de queijo expert.

Of course Brazilians don’t necessarily make these in mini muffin tins and there are a few other differences to the authentic street food of Brian’s memories, but this quick knockoff recipe definitely fulfills the cravings and our entire family has been converted to the power and tastiness of pao de queijo.

Best Brazilian Cheese Bread (pão De Queijo) Recipe

This is due in part to the cheese used in the very thin batter, but it is also helped along by the tapioca flour (same thing as tapioca starch). I’m afraid there aren’t any substitutions for this ingredient but the good news is that because tapioca flour is used widely in gluten-free cooking and baking, I’ve seen it in most grocery stores these days (we’ve come so far!).

I buy mine on Amazon (the Bob’s Red Mill brand) which works great for us since we make these easy cheesy little puffs all the time.

Get yourself some tapioca flour, a bit of Parmesan cheese (see the note in the recipe for other cheese options) and a mini muffin tin and you will be set.

Easy Pao De Queijo (blender Version)

Types of Cheese: you can experiment with many different cheeses in this recipe. My favorite combo is Parmesan and queso fresco (a widely available Mexican cheese). The texture will change if you use softer cheeses like cheddar or Monterey Jack. My recommendation if it’s your first time making is to use all Parmesan cheese and then experiment after that.

Parmesan: don’t substitute pregrated Parmesan in the green can or even the preshredded Parmesan in the bags or tubs (I tried that and the flavor was artificial and plasticky tasting). Freshly grated from a block is the way to go.

Tapioca Flour: also, in case you are wondering, there isn’t a good substitution for the tapioca flour (same thing as tapioca starch). We make these often enough that I go through bags and bags of the stuff (I buy it on Amazon – the Bob’s Red Mill brand – or it is usually widely available in most grocery stores these days).

This Pao De Queijo Recipe, or Brazilian Cheese Bread, is the stuff dreams are made of! I originally discovered it at a restaurant called Tucanos Brazilian Grill. Every time I go to Tucanos, I seriously have to try to limit myself to only a few of these little cheese rolls or I will completely go to town on them. I found a great recipe on the back of a bag of Bob’s Red Mill tapioca flour and gave it a try. I switched up the cheese to sharp cheddar to enhance the flavor, and they are so good! If you haven’t had these rolls before, now is the time! Oh, and did I mention they are GLUTEN FREE?! So this one is for all of my gluten-free friends out there!
