Easy Banana Bread Recipe For A Vegan Diet

We’ve been eating this banana bread for breakfast, as a snack or as an after-dinner dessert. Isaac loves it warm (I pop it in the toaster oven for a few minutes to reheat), but I think it’s delicious at room temperature. I like that it’s portable as well — just last week I cut off a big chunk of the loaf and took it with me as a travel snack. Honestly, I was trying to save a slice to share with my friend, but I ended up eating it all while on the plane. Oops!

Coconut flour is a naturally gluten-free flour made from dried coconut meat that has been ground. It’s unsweetened, although the natural sugars in the coconut give coconut flour a mildly sweet flavor. Coconut flour contains more fiber than any other flour, making it especially filling. The high amount of fiber also makes coconut flour super absorbent so when using it for baking you typically can’t use it as a 1:1 sub for all-purpose flour or even almond flour.

Flour – As mentioned above, you can’t sub in another flour for coconut flour in most recipes so I don’t recommend using a different flour. This recipe was created specifically for coconut flour.

Eggs – I haven’t tried using a vegan substitute for the eggs in this recipe, but someone did let me know they used flax eggs and the bread turned out, but it didn’t rise as nicely and had a denser texture. Let me know in the comments below if you try a vegan version!

Almond Butter –You can use a different nut butter as a sub for the almond butter. You could also use tahini or sunflower seed butter if you need a nut-free option.

Coconut Oil – The coconut oil and almond butter replace traditional butter in this recipe, but if you don’t have coconut oil you can use butter or another oil instead.

Chocolate Chips – The great thing about this bread is that it’s sweetness comes from the banana and the chocolate chips, but you can totally skip the chocolate chips if you want this bread to be free from any added sugar. You could also sub in something else like blueberries for the chocolate chips!

Allow your banana bread to cool completely before storing. I recommend storing in an airtight container in the refrigerator for up to one week. You can also freeze banana bread for up to three months. When you’re ready to eat it, you can eat it cold or at room temp, but I prefer to heat it up in the toaster oven.

My kids adore this banana bread with coconut flour with meals or as a sweet treat. The past couple of months I had made this banana bread recipe for them a couple of times and I thought I’d see if I could adapt the recipe to be gluten free.

As I enjoy baking with coconut flour, that was my flour of choice. The resulting banana bread is moist, tasty and you won’t even believe it’s gluten free.(And, as an update – I’m still making this recipe, exactly as shared, years later!)

Coconut Flour Banana Bread [paleo, Gf, Df]

As mentioned, I chose to use coconut flour as my gluten free flour of choice. When baking with coconut flour, you only need about a quarter to a third of the recommended flour.

Banana

Because coconut flour is super absorbent, you need to also increase the quantity of eggs to ensure you don’t end up with a dry baked good.

I chose to use unsalted butter. If you’d prefer to create a dairy free, paleo friendly banana bread then swap in 1/3 of a cup of melted coconut oil instead.

Be sure to use spotty, extra ripe bananas. They will be easy to mash and perfectly sweet for enjoying in banana bread.

Regarding the sweetness, I chose to use 1/3 of a cup of coconut sugar. When blended with the sweet bananas, we found it to be perfectly sweet. You may prefer a half a cup (or more) of coconut sugar. Or, feel free to use sugar, maple syrup or your sweetener of choice in this recipe.

Start by gathering all of your ingredients, getting out a loaf tin and lining it with well greased baking paper. Also, pop on the oven to preheat to 180C/350F.

Get out a large bowl and mash the bananas, using a fork. I often get my kids to help me with this step, they take great satisfactions in mashing the bananas to a gooey bowl full.

Place the butter in a saucepan, move it to the stove top over medium to high heat and cook, stirring often, until completely melted.

EASY

Crack the eggs into a small bowl and whisk with a fork until smooth, then pour the whisked eggs over the banana mixture, along with the vanilla. Stir until fully incorporated.

It’s easy to make, not overly sweet, and reminds me of the real thing– without using gluten or dairy.

I’ve said it before, but I’ll say it again: Coconut flour is SO tricky to work with. You’d think by now, after developing recipes like my Coconut Flour Zucchini Bread, Coconut Flour Carrot Cake, and Coconut Flour Lemon Poppy Seed Muffins, I would have a pretty good idea of how to make practically

However, it still took me 6 different attempts to get this recipe right. My picky toddler has deemed this coconut flour banana bread to be the “best ever, ” so I suppose my effort was worth it!

The resulting Coconut Flour Banana Bread is moist, without being gooey in the middle, and is also not overly sweet. It could still pass as “normal” banana bread, which is why I added just a touch of natural sweetener, but you could definitely omit the coconut sugar entirely if you don’t mind having a less-sweet bread for your family.

(See the notes below the recipe if you are interested in using maple syrup instead. I tested that, too, but the results are more moist.)

Keep in mind that the riper your bananas are, the sweeter the banana bread will be, so be sure to use bananas with LOTS of black spots on their skin for best results.

The Best Easy Banana Bread Recipe

When making this recipe, be sure to use the “scoop and swipe” method for measuring. I dip the measuring cup into the bag of coconut flour to get a heaping scoop, then use the back of a knife to swipe the excess off the top.

I’ve also included the weight of the ingredients in grams in the recipe below, if you prefer to measure using a food scale.

Like most coconut flour recipes, this one does require more eggs than a recipe using any other type of flour. Coconut flour is freakishly absorbent, and because of that it requires eggs for both structure and moisture.

Trust me when I say that I used as few eggs as necessary to produce a good result. On the bright side, the eggs do give this bread more protein in each slice.
