For those of use who have given up gluten, this may sound like a dream from days long past, but it doesn’t have to be! With this easy gluten-free cinnamon raisin bread recipe, you can have all the fresh bread you could ever want!
To be honest, making gluten-free breads, can be downright tricky. But because this recipe is formulated for a bread maker, it really takes the guess-work out of the equation and baking gluten-free cinnamon raisin bread becomes a breeze.
Before we jump to the recipe, let’s take a look at some important information about making gluten-free bread, and the bread machine I use and recommend.
Soaked Whole Wheat & Cinnamon Raisin Bread
For this recipe, I am using the Cuisinart Bread Maker. I received this bread machine last Christmas and absolutely love it for gluten- free baking. Here are a few reasons why I recommend it specifically:
The main benefit of buying a bread machine with a specific gluten free setting is that gluten-free bread with yeast requires an extra mixing cycle and only one rise cycle.
On settings for bread with gluten, the mixing time is shorter and it will pause for a second rise – not ideal for gluten-free bread. This is why the best bread machines for GF baking have a specific gluten-free setting, like the affordable Cuisinart.

Of course, this specific bread maker is not required for this recipe and other brands will work as well. If your bread maker does not have a gluten-free setting, use the setting for quick bread instead.
Although raisins are made from grapes, and grapes are naturally gluten-free, the process of making raisin bread often adds wheat flour to the dough. As a result, most raisin breads contain gluten and are not safe for people with celiac disease or gluten intolerance.
However, there are a few brands that make gluten-free raisin bread, some good choices for store-bought GF cinnamon raisin bread are Udi’s and, my favorite, Canyon Bakehouse.
Bread Machine Cinnamon Raisin Bread
The easiest way to ensure your cinnamon raisin bread does not contain gluten, of course, is to make it yourself. And with a bread maker, the process is really really easy.
Nope! When baking gluten-free bread, it’s important to use an all-purpose GF flour without added xanthan gum. Not a 1:1 GF baking flour.
The reason is gluten-free bread requires an exact ratio of xanthan gum. The xanthan gum in “measure for measure” GF flour is not enough to yield good results.
Perfect Bread Machine Gluten Free Bread
The ingredients were not mixed well enough. While the gluten-free setting on the bread maker does have two cycles, it is still not enough.
Solution: Here is the best way to solve this issue. When the machine beeps after the first kneading cycle, pause the machine and mix gently by hand, making sure to scrape the sides, and then replace the dough into machine to finish the process.
The first step to making awesome cinnamon swirl raisin bread at home is to gather the ingredients. For best results, make sure they are all at room temperature before starting.
Gluten Free Cinnamon Raisin Bread With Cinnamon Butter
*Note – Because the amount of flour needs to be more exact than a measuring cup, it’s best to measure the flour on a food scale. Different flours have different weights, however. For this recipe, I used Bob’s Red Mill Gluten-Free All-Purpose Flour. For this flour 3 1/4 cups = 442 grams. Make sure to check the conversion rate for whatever flour you are using.

I was too lazy to take the dough out and add cinnamon raisin filling to roll up… so, I mixed the ingredients up and added along to knead cycle… really tasty:) and easy too! The first thing I thought of when I was diagnosed with Celiac Disease is how I would never have bread be a part of my life anymore. The truth is, bread can still be a part of your life. Sometimes to get a really good bread though – you have to learn to make it yourself.
I loved raisin bread before being diagnosed. I had never baked any from scratch before having to eat gluten free, so I had to do some research to try to re-create this recipe. After a little researching, and some testing, I’m thrilled with how this gluten free Oatmeal Cinnamon Raisin Bread turned out.
Easy Gluten Free Cinnamon Raisin Bread
This loaf isn’t dry or “fall apart” like a lot of store-bought breads. It is moist and not at all crumbly. Properly wrapped in plastic or a zipper seal bag, this gluten free Raisin Bread stays fresh on the counter for up to 3 days. It also toasts up beautifully – my favourite way to eat it is toasted with some butter and a light sprinkling of cinnamon and sugar.
I baked this loaf in my 9″x4″ Pullman Pan, I just didn’t put the lid on it since the dough rose to the top of the pan before baking. But I really like the shape of loaf that the Pullman pan gives – a nice tall loaf with straight sides.
Place oats & raisins in a bowl and cover with hot water. Set aside and let soak for 10 minutes. Drain water using a sieve or strainer. It is Ok if it is still wet, you just don't want any puddles in the mixture.
Gluten Free Bread Machine Recipes (homemade Goodness)
In a small mixing bowl, combine water, sugar & yeast. Stir and let sit until foamy on top. Then add the cider vinegar, vegetable oil, eggs and egg whites.
Add the soaked oats & raisins to the dry ingredients. Turn the mixer (with the paddle attachment) on low speed, and slowly add the wet ingredients. Once combined, scrape down the sides of the bowl with a rubber spatula. Turn the mixer on medium, beat for 2 minutes.
Spoon dough into prepared bread pan. Let rise, uncovered, in a warm, draft-free place for 25 minutes, or until it has reached the top of the bread pan. (I preheat my oven to 100 degrees F, and turn it off, just so it is warm in there, and then I leave the oven light on for warmth.)
Cinnamon Raisin Bread For The Bread Machine Recipe
Place bread in preheated 350 degrees F oven, and bake for about 35 minutes, or until the internal temperature with an instant read thermometer is 200 degrees F.
Remove loaf from oven, and leave in the bread pan for 5 minutes. Remove from pan and cool on wire cooling racks (I like to cool loaf on its side, flipping ever 5 minutes).
When the loaf is completely cool, store in airtight bag. Can be left on the counter for 3 days, or frozen (wrap in additional plastic wrap if freezing).
