Divide the dough into 6 equal pieces, sprinkle some flour on top of the dough balls, and cover with a clean kitchen cloth.

Dust the dough ball with more flour, then flatten and stretch it gently with your hands until you have a roughly 20 cm (8) Ø circle.

When the pebbles are really hot, carefully transfer the dough circle directly over the pebbles. Carefully stretch it out to form a more circular shape if necessary.

In the very old days these ovens were built below the ground, and a key to heating them was hot, smooth stones that were at the bottom of the oven.

With time it became more practical to build these ovens above ground, but the hot stones remained as a way to cook the bread.

Taboon and pita are basically the same, as they are made with a plain dough (flour, water, salt, yeast, and olive oil). Naan has a richer dough that contains egg and yogurt, and it doesn't have a pocket like pita does.

Traditionally, they were baked in a special clay oven on top of heated stones. The uneven surface gave the bread a bubbly appearance, and the extreme heat of the stones char it in places.

If you don't want to use the stone method, you can always bake them on a pizza stone or cast iron skillet, and char them under the broiler for a couple minutes.
