Vegan Cinnamon Bread Recipe

Granulated sugar to sweeten the main part of the cinnamon bread. It keeps the cake part a light color so you get a nice contrast between the cake and the cinnamon swirl.

Dairy-free milk. Honestly, it doesn't really matter what milk you use. You can even use water! I personally prefer soy milk, oat milk or almond milk as they make cakes a little richer.

Raising agents and vinegar (not pictured). As this cinnamon bread is eggless, we're adding a little more baking powder to help the bread rise properly. The vinegar gives the bread a more tender crumb, and replaces some of the functions of eggs.

Vanilla. Normally, vanilla is optional but I highly recommend it for this recipe as it's one of the main flavors of the cinnamon bread.

Optional: vegan butter or coconut oil if you'd like to make a crunchy streusel topping. We're combining it with a few ingredients you'll already have from the loaf.

The cake part of this quick bread comes together in one large bowl! Just mix the dry ingredients, add the wet ingredients then mix again.

My TOP tip for the batter is to not overmix it! Just make sure there are no more streaks of flour, although some lumps are okay. However, if you can see granules of sugar in the mixed batter, fold the batter just once or twice to help them dissolve.

The streusel topping is completely optional but levels up your vegan cinnamon quick bread. I made the streusel a little more crumbly than other streusel mixtures because it makes the baked bread easier to cut.

There are no rules for assembling this vegan cinnamon bread! You don't have to be precise and the swirl looks different in every slice and every loaf.

Soft & Plush Cinnamon Vegan Babka Recipe

Some people like to have one very thick layer of cinnamon sugar in the middle. Others prefer to 'swirl' the cinnamon sugar through.

Don't worry about getting precise amounts of cake batter and cinnamon sugar. Once I used just a few tablespoons of batter for one layer and the bread baked beautifully with obvious layers!

You also don't need to use a knife/skewer to swirl the batter and cinnamon sugar together. The gravity of the cake batter automatically gives the cinnamon sugar a swirly pattern.

Vegan Cinnamon Raisin Bread

Coconut and/or brown sugar will work. However, it will make your bread light brown in color so the cinnamon swirl won't be as noticeable.

Unfortunately, maple syrup is too heavy for this recipe. If you'd like a refined sugar-free cinnamon bread, try using granulated stevia or erythritol.

I haven't tested this cinnamon swirl bread with gluten-free flour so I'm not 100% sure. However, a good quality 1:1 gluten-free all-purpose flour may work.

Vegan Cinnamon Raisin Bread (a No Yeast Quick Bread)

You can feel really good about the ingredients in this vegan cinnamon bread because they’re whole and simple. Don’t worry, we’re still gonna add in that cinnamon sugar topping—because what’s life without a little wonderful sweetness? You’re sure to love this vegan sweet loaf for all the right reasons.

Make sure to head straight to the oven, empty out anything you’re storing in there (we all do it), and preheat the oven to 350°F. Then, grab an 8-inch loaf pan and line it with parchment paper or greased foil. Set this aside for later.

First, warm up your water and milk mixture—this is to prevent that finicky coconut oil from becoming solid when these two components touch. Now, add in the melted coconut oil, coconut sugar, maple syrup and vanilla. Whisk together until well mixed.

Pour the wet mixture over the dry mixture in the large mixing bowl. Whisk to combine, creating your vegan cinnamon loaf batter.

Pour the batter into the prepared loaf pan. Grab the cinnamon sugar you prepared earlier and sprinkle it beautifully over your batter.

This vegan cinnamon bread has deliciously cozy cinnamon flavor throughout a soft and moist loaf, topped with a light cinnamon sugar crust. We’ve got the best of both worlds here: a deliciously whole ingredient vegan sweet loaf, with just the right amount of cinnamon sugar wonderment atop for the perfect treat to enjoy with a cuppa (kinda like with these cinnamon oatmeal cookies or these vegan cinnamon cookies).

Sweet And Simple! Vegan Cinnamon Raisin Bread Maker Recipe!

Before we jump into some tips & tricks to make this vegan cinnamon cake, here are the ingredients you need to make this cinnamon loaf cake:

Vegan

First, add the wet ingredients like oat milk, apple cider vinegar, applesauce, sugar, brown sugar, oil, and vanilla to a bowl and whisk together.

Then, add the dry ingredients. Always make sure to add the flour first, then pour the baking powder, baking soda, salt, and cinnamon on top. This helps to make sure the leavening agents get mixed evenly within the batter and don't clump up.

Vegan Cinnamon Bun Bread

Do NOT overmix the batter. This means mixing the batter JUST until all streaks of flour are gone. It's actually okay if there are some lumps in the batter.

Over-mixing batter can lead to a super dry & gummy bread which we want to avoid. Basically, you should end up with a slightly thick batter with some lumps in it as pictured below.

This part is pretty easy, but in a smaller bowl add in the remaining sugar & cinnamon and whisk together. Then, set aside.

Vegan Cinnamon Bun Banana Bread (gluten Free)

Next, you are going to grease a loaf pan (I used this 1 pound USA Loaf Pan) and add in about ⅓ of the cinnamon swirl loaf batter. Then top with about ⅓ of the cinnamon sugar topping and use a knife to gently swirl the batter and sugar together.

Repeat this two more times, ending with a thin layer of cinnamon sugar on top. This will provide a nice crunchy topping to this vegan cinnamon bread that is honestly SO good. Do one final swirl with the knife and then add to the oven to bake!

This eggless cinnamon cake takes a decent time to bake because we want to make sure the inside is cooked through completely.
