While the oven preheats, add room temperature butter and sugar to a mixing bowl. Mix on medium to high speed with a paddle attachment to cream butter and sugar together. When the butter mixture is light and fluffy, add the eggs and mix again just until combined.

Next, add the flour, baking soda, and salt to a medium-sized bowl. Whisk to mix it then add the flour mixture to the butter-sugar-egg mixture, and mix until it’s combined.

Add the sour cream, vanilla, and mashed bananas. Mix again. Finally, chop or smash the walnuts and stir them into the batter.

At this point, test the bread for doneness by inserting a toothpick into the middle. If it comes out clean, the bread is done. If batter clings to the toothpick, then it needs another 5-10 minutes.

When finished baking, remove the loaf pan from the oven and let it cool for 10 minutes before removing it from the pan. Place it on a cooling rack to finish cooling.

Add 3 tablespoons of confectioners’ sugar, 1/2 teaspoon of vanilla extract, and 1/4 teaspoon of kosher salt. Mix until smooth and fluffy. Spread the frosting over the banana bread after it has cooled.

If you want to incorporate whole wheat, we’d recommend going with half white and half wheat flour to prevent the bread from getting too dense.
