Gluten Free Breakfast Bread Recipes

My favorite gluten free banana bread – this recipe is unbelievably easy to make, moist and flavorful. It can also be made dairy free!

One of the very first recipes I posted when I started this blog was for gluten free banana bread. At the time, I thought it was amazing. Over time, I slowly continued to adapt it and it has evolved into one of my very favorite quick breads.

Gluten

Speaking of quick breads, you should try my cookbook: The Gluten-Free Quick Breads Cookbook. Gluten Free banana bread really helped get What The Fork off the ground and running and is extremely popular!

Easy Gluten Free Banana Bread {dairy Free Option}

The base of this recipe helped me develop the recipes for my double chocolate banana bread and my gluten free pumpkin banana bread. I’ve also got several other versions of this simple banana bread recipe with oil that I haven’t shared on my blog yet – all from this one delicious base recipe.

I’ve mentioned before how I always ALWAYS have over-ripe bananas. It’s a blessing and a curse. I will only eat bananas when they’re just barely ripe, even still a bit green around the top and bottom. As soon as there’s even just one little speck of brown, it’s too ripeso I’ll let them sit until they’re ripe enough to bake with. I feel like I’m always baking with bananas!

That’s not always a bad thing though. That means I’ve baked dozens upon dozens of this super moist banana bread over the years. And even with all those homemade banana breads, we still haven’t gotten sick of it. That just goes to show just how good this easy quick breadis!

I’ve also made this recipe many, many times with regular flour and regular milk. I often make this for my husband’s grandparents and my next door neighbor that way since they don’t have to eat gluten free or dairy free. It’s really great that way too so if you don’t have to eat gluten free, you don’t have to pass on this recipe!

Yes 100%! The only modification you need to really make is to use coconut milk instead of regular milk. This recipe calls for oil instead of butter so no worries there! You’d never know this moist banana bread is gluten free and also can be easily made dairy free!

There are a couple of options to save this one bowl gluten free banana bread for later in the freezer. You can freeze the whole loaf wrapped up in plastic wrap and then store inside of a gallon freezer bag.

Or, you can slice up the banana bread loaf into individual slices and freeze each one separately for a quick grab and go! Either option is great and makes life so much easier!

And just for the record, I think I might subconsciously buy too many bananas all the time just so I have an excuse to make this best ever banana bread all the time. Enjoy!

Hi can i use Bob’s red mill (the red bag) instead of 1 to 1 baking flour? And do i have to omit xantham gum? I really need your answer and thank you 🙏🏻

Easy

You can but you will have to use xanthan gum with that flour since it's not already mixed into the flour blend. However, I recommend using a more neutral tasting gluten free flour blend that doesn't contain bean flour.

Date Nut Bread (easy, Vegan, Gluten Free Loaf)

Awesome banana bread! I omit the walnuts because I never seem to have them on hand and the loaf comes out spectacularly. My non-gf boyfriend requests this recipe every week. Great job!

Finally got a chance to try this recipe (2 kiddos with celiac disease) and it was PERFECT! I used the Bobs Red Mill 1 to 1 flour so I was able to omit the xanthum gum, I honestly can’t tell it’s gluten free. So good. Thank you for this recipe!!

I haven't tried any of my quick bread recipes with an almond flour blend so I can't tell you for sure if the texture will be right. I highly suggest my flour blend: https:///2016/01/14/nightshade-free-gluten-free-flour-mix/

Blackberry Banana Breakfast Bread

If you don't want to use Bob's Red Mill flours to make the flour mix, there are other options available. I've used Thrive Market brand brown rice flour, Arrowroot, and Tapioca with great success. You can use Authentic Foods white rice flour.I've been eating oatmeal for breakfast on weekdays for years. Oatmeal 5 days a week for years. YEARS. And I dreaded the day that I would get tired of it, because oatmeal for breakfast is so easy, so healthy, and most importantly, so portable for work. I am not a morning person, so I barely make it out of the house to get to work on time, so bringing oatmeal in a container to eat at my desk was the perfect solution for me.... until recently. And then I got tired of having the same thing for breakfast every day.

). And then I came up with this bread recipe! It is perfect. I bring in a thick chunk of bread to work, pop it in the toaster, and eat it with my morning cup of coffee. It is just so satisfying and filling and delicious. At home I put butter on it, but at work it is good enough by itself. I don't like sweet things for breakfast so it is perfect for me. It might not be perfect for others as breakfast, but if you like the texture of vegan-paleo-type breads then this recipe is worth trying (though it is obviously not vegan or paleo, it just has that same 'healthy' texture).

I really like the texture and flavor of this bread - it is very nutty and delicious. And I like that I can bake this on Sunday night and it will last me all week.

Gluten Free French Toast Casserole

I came up with this recipe after trying several versions of coconut flour pancakes (none of which were awesome 🙁 ), and as I looked up recipes for coconut flour bread, I really thought that this bread really needed some kind of flour that would bind, not just ground up almonds or coconut. So I made a flour out of oatmeal.I've been using this flour as a partial substitute for wheat flour and I've really been liking it, so I will try to create more recipes with it. But until then, here is the recipe for the Gluten Free Breakfast Bread.

Note: You can make your ownoat flourby processingquick cooking or instant oatmeal in a food processor or a magic bullet for a few seconds until a flour forms. In order to have true gluten-free bread, you must use oatmeal or oat flour that is specifically labeled gluten-free, otherwise, oats often contain traces of wheat.

1. Preheat oven to 350F. Grease a small bread loafpanwith butter or spray with non-stick spray. I used an 8 x 4 inch loafpan.

2. Combine all the dry ingredients (coconut flour, oatmeal flour, almond flour, flax seed, salt & baking soda) in a large bowl and mix well.

5. Add the batter to the greased baking dish and bake at 350F for 35 minutes, or until a toothpick inserted into the center comes out clean.

We love that this bread is GF and utilizing so many great ingredients like oat flour and flax seeds. We hope to make it dairy-free as well by using a nut-based milk; do you think that the batter will prepare just as well?

The oatier the better for me when it comes to bread. I love this breakfast bread! I am going to put it in my next week's link roundup.

I think this bread is beautiful for breakfast but it wasn't until I read that you'd eat it with some salted butter that I knew you were on my side. :)

Panos doesn't like eating sweets in the morning as well, so this is a great alternative for the classic oatmeal:) What we usually do with rolled oats, is serving them with a little all-bran, different nuts each day, a couple of dry fruits or raisins and a different (half) fruit as well. Oh and low fat milk. This helps changing the taste a bit so you won't get bored:) But we realize what you mean when you said...FOR YEARS above:):):) This bread seems very easy to make, plus it's versatile (you can also drizzle some honey on it for example). So, it's a really good frugal recipe! Excellent work Kate. Greetings, Panos and MirellaYou may remember my recipe for gluten free banana bread with butternut squash.
