In an attempt to burn a few excess pounds and cut back on carbs generally, I’ve been focusing more on foods high in protein and healthy fats the past few weeks.  High protein/high fat foods are more satiating, which means you’re less likely to nibble throughout the day, they lead to more stable blood sugar, and contribute to improved body composition.

But giving up bread is HARD.  Even if only temporary.  Can you relate?  So I’ve been experimenting with some low carb/high protein bread alternatives to help me stay sane while I’m on my low carb kick.  I’ve found a great solution:  Paleo Bread!

Not Eggy!) Gluten Free & Keto Bread With Yeast

This Paleo Bread is low carb, high protein, and is packed full of nuts, seeds and nutrients.  No dairy, no eggs, and naturally gluten free.  Enjoy it with some low sugar fruit preserves, natural nut butter for some extra protein, or some cheese and cold cuts.  Pair it with some probiotic-packed homemade yogurt and a little fruit and you’re all set.

This healthy Paleo Bread is the perfect way to jumpstart your morning, give you a late morning energy boost, or as a satisfying lunch or light dinner!

At the time I first developed this paleo bread recipe our daughter was 4 years old.  She was a good eater, willing to try new things (not so true for our then 6 year old son!), but I was pretty surprised to see her wolf down this bread.  Over the course of three days she ate 3/4 of the loaf all by herself!  Her favorite thing was to spread it with some butter, some homemade fruit preserves, and enjoy an open-faced nut bread sandwich.

Low Carb, Gluten Free Bread Recipe: With Tumeric & Seeds

She kept me going making one loaf after the other for quite a while!  And I was perfectly happy to accommodate knowing she was getting lots of protein, fiber, vitamins, and minerals.

Place the whole almonds and hazelnuts in a food processor and pulse until coarsely ground.  Add the pumpkin seeds, sesame seeds and flax seeds and pulse until ground.

Line a 8×4 inch loaf pan with parchment paper.  Spread the mixture into the lined loaf pan and use a spoon to smooth down the surface.  Sprinkle the top with some extra pumpkin, flax and sesame seeds (I also used sunflower seeds for the top).

(Note:  Do not include sunflower seeds inside the bread itself, it causes a chemical reaction that results in the bread turning green – that’s GREEN! – I’m totally serious.)

Bake the bread on the middle shelf for 45-50 minutes or until a toothpick inserted into the center of the bread comes out clean.  Let the bread cool completely and then remove it from the pan.

Keto Sunflower Seed Bread (nut Free, Egg Free)

Seed bread is a hearty, dense loaf made from seeds. It does not contain any flour, egg or dairy. It’s naturally vegan and gluten-free and suitable for those following a low-carbohydrate or even keto diet.

Seed bread has a nutty, earthy flavour and chewy texture and is a delicious way to enjoy healthy seeds like flax, chia, pumpkin seed and sunflower seed.

Low Carb Flax Meal Bread

You can use a mixture of nuts such as almonds, walnuts, hazelnuts, and pecans to replace up to 1 cup of the seeds. Since this is a “seed bread” I kept the recipe nut-free but I’ve made it with walnuts and that’s delicious too!

The dry ingredients include all the seeds plus the psyllium husk powder and salt. If you want to add seasonings or sweetener to the bread, add that now as well.

Add the dough into the lined loaf pan and spread evenly until flat. Pop it in the oven and bake for 50 minutes.

Quick Tip: Do not skip lining the loaf pan with parchment paper. Parchment paper makes it super easy to lift the bread out of the pan once baked.

The stevia is optional but I find a hint of sweetness really improves the final taste. Alternatives include monk fruit sweetener to keep it sugar-free, otherwise, use 1 tbsp maple syrup or coconut sugar. I used stevia to keep it sugar-free for those that need it. Maple syrup is my preferred sweetener here.

Baking without flour has become quite normal for many people all around the world. Some don’t use it because they have problems with gluten, others simply want to eat fewer carbs. However, if you are used to baking with flour, it can be quite challenging if you have to make something without. Adapting a recipe by replacing only the flour with something else just won’t work. I assume you knew that already ;P

Low-carb bread or gluten-free bread like this one here will never look or feel the way a regular sourdough bread looks and feels, for example. Kneading a dough made with flour creates gluten which gives a bake a certain texture and elasticity. Difficult to imitate with other ingredients. For that reason, most low-carb bread recipes create something that is more like a cake… At least from my experience. Sure you try to “mimic” the gluten structure in a pastry by using a wide variety of ingredients, but that only works to a certain extent. That does not mean that you can’t get something delicious on your table ;P

This bread here without flour has quite a compact structure, it crumbles only slightly, and holds together quite well when you cut a slice. It’s super moist and has a great flavor thanks to the toasted almonds, oatmeal, and seeds used. The bread is great for a healthy breakfast in the morning and works well as a side – with a salad or meat, for example.

If you are not able to eat the whole bread within the first two days, I recommend freezing half of it right away. Just wrap single slices of the fresh-baked bread into foil (or use a container) and freeze them. Whenever you are hungry you can defrost 1-2 slices and toast them, for example. Works really well. Saved us several trips to the bakery already ;P
