Oat Bread Recipe With Yogurt

This healthier Greek Yogurt Banana Oat Bread is made without butter or oil, but so soft and tender that you’d never be able to tell! Naturally sweetenedwith plentybanana flavour, it makes a great healthier alternative to a traditional favourite!

Trying to come up with a way to start this post and nothing was coming to me, so I decided to just write out the first thing that came to mind and that was it.

That’s actuallyparaphrasingit nicely. The reality of the situation isthat my momkind of“subtly hinted” that I needed to makesomething especially for her bypointing outthat I nevermake anything she can eat… which is kind of true.

You know how I mentionedthat she has those salicylate sensitivities? Well, pretty much everything I make has either almonds, dates, honey, or coconut in it, aaaaaaand she can’t have any of those.

Have flour, oats, bananas, maple syrup, and Greek yogurt, which is exactly what’s the kind of ingredients you’ll find in this loaf ofGreek yogurt banana oat bread.

Flourless Irish Oat Bread Recipe

What I did was take the recipe for my Greek yogurt banana breadandtweak ita little bit to allow for the addition of oats. Oh, and to make everything in one bowl.

It’s just as soft and tenderas the original despite the little bit of extra heartiness, and you’d never be able to tell that it’s made without any butter or oil. For sweetener, I opted to just use maple syrup to make it refined-sugar-free. Everyone found it to be sweet enough with just 6 Tbsp, but if you like your banana breadon the sweeter side, I included an option to add a little extra sugar.

You can also toss in some add-ins like chocolate chips, dried fruit, or nuts, but I’m a purist when it comes to banana bread and prefer it without any other flavours competing for tastebud love. I get that from my momma; and this bread’s for her.

Now that I’m all grown-up, kinda 😉 I’ve always been intimidated when it came to making bread. My grandmother was a great cook and I would never think I could challenge her in the baking department! Well that was until our nanny, Emma, showed us just how easy it is to make bread. She walked me through her simple yet healthy recipe and we were all thrilled with the outcome.

Oatmeal Bread (no Yeast & No Knead!)

What I love about this recipe is the absence of flour, yeast and canola oil, which you would find in your basic bread loaf recipe. It’s replaced with a whole lot of healthy goodness that will not make you feel guilty about eating this bread.

The main ingredient is oats. Oats are loaded with fiber and has antioxidants that have protective properties against heart disease. Yogurt is the second ingredient, which adds a moistness to the bread that is amazing.

Mix all ingredients together in a mixing bowl. Grease loaf tin. Pour bread in and sprinkle seeds of your choosing on top. We used sunflower seeds for ours this time. Bake for 40 minutes. Remove bread from the oven and let it sit for 10 minutes to cool so you can remove it from the tin. You’ll need your cooking mitts for this. Once removed from the tin, place back into the oven for an additional 10 minutes so the edges brown up nicely. Remove and let cool.

But we could hardly wait! We sliced it up and put some butter on it and it was delicious. It was so warm and moist from the yogurt. A total treat! After spotting this easy oat bread recipe in the cookbook I just knew I had to try it, and I'm so glad I did, it's seriously one of the best new recipes I've tried in a long time. Not only is is really quick and easy to prepare, but it tastes amazing and is really filling so a perfect start to the day.

The porridge bread also keeps for several days after making it so it's a great recipe to bake on a Sunday afternoon ready for quick and easy weekday breakfasts for the whole family.

Simple & Easy Wholemeal Yogurt Bread Rolls

Pour the bread mixture into the lined loaf tin. Smooth out the top and draw a line down the centre of the loaf with a knife.

Place in the pre-heated oven to bake for 45 minutes. After 45 minutes, carefully remove the loaf from the tin then put it back in the oven, directly on the oven shelf, and bake for another 5 minutes. This will help give the loaf a lovely crispy crust.
