Great recipe, it was my first time using spelt flour (for anything!). I didn't have any baking powder so I substituted with 1 cup greek yoghurt and 1/2 teaspoon baking soda/bi-carb and then left out the milk, and it came out fabulous!Spelt banana bread is naturally vegan and made extra delicious with chopped pecans and chocolate chunks. 10 ingredients and simple to make.
It is honestly difficult to gauge what is appropriate to share right now. I had a roundup style post of pantry-friendly recipes ready to go, but it all had such strong doomsday-ish undertones to me. I know that these recipes are practical and needed for folks working through this collective unknown. I also know that as this time period of social distancing goes on, I’ll probably be sharing that content eventually, but right now I’m looking to cook for comfort as much as possible. We all have to take this social distancing responsibility seriously to help those most at risk and to lessen the burden on health and medical professionals. Vegan Banana Bread (easy + Healthy)
I had a bunch of deep brown bananas on the counter and while freezing them for smoothies or another future use may have been smarter, comfort and a break from this new routine just seemed necessary. I was completely blown away by this Spelt Banana Bread today and have to say it’s the best Banana Bread I have ever tasted. I have never used spelt flour before and have heard so much about it and yet knew nothing about it until now.

Last weekend I read with great interest an article in the Daily Mail about Roger Saul, the founder of designer label Mulberry and his journey in setting up Sharpham Park. It is here that organic spelt is grown and turned into Bran Flakes, Pearled Spelt, Spelt Flours, Spelt Risottos, Cereal Bars and Artisan Pasta.

After today’s resounding success I can’t wait to try some more recipes out, I think spelt has put a spell on me! Not only is spelt high in fibre but it also contains plenty of iron, potassium, zinc, riboflavin and other vitamins and minerals.

Yes I have made it with ordinary plain flour but would recommend using wholemeal as it adds a nuttiness similar to that of spelt flour or use a combination of the two. I have also used a mixture of strong plain flour and self raising flour when that’s all I had and that worked fine too. This is a very forgiving recipe!
