Hey guys! I hope you’re not tired of summer zucchini yet, because this Chocolate Chip Zucchini Bread is a summer MUST! It’s time to head on out to your garden or to your local farmer’s market and grab a few zucchini and get baking, shall we?

Moist Chocolate Chip Zucchini Bread

Growing up, my mother went through this zucchini phase one summer. I’ll never forget it. It was this Cheesy Zucchini Casserole with ground beef, zucchini boats filled with all kinds of concoctions, kabobs with zucchini…the list goes on.

Last year was my first attempt at zucchini bread. I made this Chocolate Zucchini Bread and even Mr. Picky was all about it. You know, I never mentioned the word zucchini when I served it up because if I did I knew he’d never give it a try.

I grabbed a few zucchini at a local stand a few weeks back and I think I’ve made and shared this loaf at least a half a dozen times already.

Chocolate Chip Zucchini Bread

It’s a great way to use up the extra zucchini from your garden and who doesn’t love a loaf that’s loaded with chocolate chips?

Pour the wet mixture into the dry mixture and mix until just combined and then you’ll fold in 3/4 cup of the chocolate chips.

Pour the batter into the prepared pan and then smooth the top and then sprinkle with the remaining chocolate chips. You’ll bake the loaf for 45-50 minutes or until a toothpick inserted in the center of the loaf comes out mostly clean. If your loaf seems to be browning too quickly, just tent with foil. Remove from the oven and cool on a wire rack.

While semi-sweet chocolate chips are a crowd favorite for adding into zucchini bread, don’t be afraid to mix it up and try some other additions!

Once cooled, you’ll want to wrap your loaf in plastic wrap and store it on the counter for up to four days! It will last longer in the refrigerator, but refrigerating the bread can also dry it out. I prefer to store it at room temperature and let’s be honest, a loaf never lasts four days. We usually devour the entire loaf in one or two days:)

You could also warm it in the toaster oven–yum!

Easy Chocolate Chip Zucchini Bread

I brought a fresh loaf of this chocolate chip zucchini bread to the final celebration of our Girls On the Run Team. It was still a little warm from the oven, and the pieces were snatched off the snack table quickly, even though it was up against brownies, cupcakes, and cake.

I’d say that’s a testament to the power of the still-a-little-melted chocolate chip. Just a spoonful of chocolate helps the zucchini go down!

Whole Wheat Flour Tip: Store your whole wheat flour in the freezer to keep it fresh longer. Because it has natural oils from the wheat bran, it can go rancid more rapidly than all-purpose flour, so freezing it will slow that process down. I store mine in a resealable freezer bag.

Double Chocolate Zucchini Bread

Make sure your oven is fully preheated to 350 degrees F before you place the bread in the oven. Generously coat a 8 ½ by 4 ½-inch glass loaf pan with cooking spray.

Measuring Tip: Measure out your oil first, then the honey. Once your pour the oil into the bowl it will coat the measuring cup. Next when you add the honey, it won’t stick to the cup and slide right out!
