I created this coconut flour bread recipe for all my readers that need nut-free options. People have been asking me about how to make coconut flour bread for a long time. Most low carb bread recipes have nuts, which is a problem for those with nut allergies — and you can’t just replace almond flour with coconut flour, due to how absorbent coconut flour is. Personally, I make my fluffy keto white bread or almond flour bread most often, but this keto bread with coconut flour is a delicious alternative for those that can’t have nuts.

Even for those of us without allergies, you may be interested in this recipe if you have school-age kids, as many schools don’t allow nuts. I wanted a trusted coconut bread recipe that I can use for my own kids’ lunches, and this one works great for that!

One of my favorite parts about this bread is that even though it tastes delicious, it’s also loaded with good-for-you ingredients — like organic Hemp Hearts! Although plant-based, they contain complete protein, a solid omega 3:6 ratio, and are rich in antioxidants and minerals. I also use them to make hemp milk and for topping recipes like kale crunch salad and keto yogurt. Healthy bread never tasted so good!

Feel free to use different seeds in the same quantities, just make sure they are similar sizes. Too many large seeds will cause the coconut flour bread to fall apart too easily.

What does coconut flour bread taste like? Let’s be real here. Many coconut flour bread recipes are dense and dry. Coconut flour can be a little challenging to work with, because it’s so dense and absorbs so much liquid. And it’s coconut-ty, which is delicious on its own, but not so much what you want in a simple sandwich bread.

That’s why I spent a long time (5 trials!) testing and perfecting this version. Here are my key tricks to making coconut flour bread that actually tastes good:

At least not in my book. Fresh from the oven, yeasty and warm. My only problem with said sourdough is its aftermath- a (my) proclivity for severe stomach swelling consequence. Worth it? Perhaps. But in the more conscientious effort to quell nearly two years worth of digestive discomposure, these past few months have been met with my gradual transition into a pseudo-gluten-free mealtime existence, with necessary exception. With most store bought alternatives leaving everything to be desired, this luscious loaf is wholly inspired by Erewhon  – a Los Angeles based market doing ‘it’ really right. Committed to bringing local and organic produce from farm to table, Erewhon not only offers an immense selection of seasonally and locally inspired prepared meals and provisions, but a sixteen dollar paleo bread to boot. Nestled across the country and only just slightly too pricey for our pockets, our home prepared rendition has quickly become a mealtime staple. Inherently nourishing, unprocessed, and grain free while still maintaining that wonderfully moist and crusty ‘bread-ness, ’ each slice is rich in almond and coconut’s ‘good’ fats, belly filling protein and fiber, and numerous other vitamins and minerals like iron, vitamin E, calcium, and potassium. Best fresh or rewarmed from frozen, we serve ours sliced thick and toasted, alongside Andrew’s frittata, topped with golden hummus or warmed nut butter, or served solo as an almost pound-cake like little treat. In a large bowl, whisk  almond flour, flaxseed meal, coconut flour, baking soda and sea salt until all clumps are broken down. Stir in eggs, coconut oil, maple, and vinegar and continue whisking until mixture is just combined.

Yes, you can substitute for Xanthan Gum in gluten-free baking. Since the Xanthan Gum is used as a binder in place of the gluten protein, you'll need to use a different baking binder so you finished product will have the appropriate texture and won't crumble. The best subs for Xanthan Gum are Guar Gum or a Gum-free Baking Binder made from psyllium husk powder and potato starch.

You definitely can substitute unsweetened coconut flakes for the sweetened coconut flakes in this recipe, but the flavor will not be the same. While you’ll still have the subtle pops of the coconut - you will be missing out on the sweetness in these coconut pockets throughout the bread.

While you can replace coconut milk with regular dairy milk or another alternative, it would no longer be quite as coconutty. To give it the best coconut flavor, you'll need coconut milk. However, you can use regular milk and add 1 teaspoon of coconut extract if you like.Coconutis a staple in many paleo meals because it’s so versatile. Gluten Free Banana Bread With Coconut And Flax Recipe

I love everything about coconut — the distinctively sweet flavor, how it’s so easily available in practically any supermarket, and of course, the abundance of healthy medium-chain triglyceride (MCT) fats contained within them. (1) This coconut bread came to life when I wanted to use up my leftover coconut flour from the last time I made lemon curd coconut pancakesso I thought, why not make bread out of it using one of my existing recipes. As usual, no refined wheat flour was used, but you would never guess with how incredible
