Ever since going on a keto diet, I’ve been missing pita bread and flatbread like crazy! While I do enjoy a good keto bagel or keto donut, I can never go past a simple flatbread.

This keto flatbread recipe is so easy to whip up. You do them over a stovetop but the key here is to ensure you cover the frying pan and cook on low heat- Doing this results in the perfect crispy outside and easy flipping.

Coconut Flour & Psyllium Flatbread

If made correctly, I promise they won’t taste eggy, and be durable and perfect for all your flatbread, pita bread and wrap replacement needs!

Start by adding your egg whites into a large mixing bowl. Add your coconut flour and baking powder and whisk very well, until combined. You’ll want to let the mixture sit for several minutes, to thicken.

While the keto flatbread batter is sitting, start preparing your pan to cook the flatbreads on. Grease a large, non-stick pan with cooking spray and heat up on low-medium heat. Once hot, add ¼ cup portions of the flatbread mixture and use a rubber spatula to spread it out. Cover the pan immediately, so the hot air cooks evenly. Once bubbles start to appear around the edges, remove the cover, flip and cook for another 1-2 minutes. Repeat the process until all the batter i used up.

We use egg whites in this recipe to both keep the calories low but also have a fluffier and lighter flatbread. You can use whole eggs, but be wary that the texture can be quite ‘eggy’ and dense.

Most flatbread recipes are made with wheat flour, but this one gets its classic, chewy texture from Wholesome Yum Blanched Almond Flour and Wholesome Yum Psyllium Husk Powder. Once you try this combo in your keto baking, you’ll never go back. It helps to create light, fluffy, and chewy texture.

You’ll love this low carb flatbread recipe! Not only is it easy (just 7 ingredients and 30 minutes!), but it can be eaten in so many ways and has a texture similar to the real thing.

TIP: Chill the keto pita bread dough if needed. It should be easy to roll between parchment paper layers without sticking, but if your kitchen is very warm, place it in the fridge for 20-30 minutes to make it easier to work with.

If an almond flour flatbread has been made with keto-friendly ingredients, then yes, it is probably keto. But you’ll always want to check the ingredients and nutrition facts, as it’s possible for a recipe to have other ingredients that are not low carb.

What about pita bread? Sadly, no, most pita breads are not keto friendly either, as they are made with wheat or white flour just like flatbreads are. Make this low carb pita bread recipe instead and you can enjoy pita bread on keto again.

Possibly. I haven’t tried it, but in theory you might be able to replace the 1 cup almond flour with 1/4 cup coconut flour (yes, just a quarter the amount, as coconut flour is very absorbent!). You’ll get fewer flatbreads but the dough consistency should be similar. You could also try coconut flour tortillas instead for a similar pliability without any nut flours.

Yes, you can freeze keto flatbread. Store the pieces with parchment paper in between layers to prevent them from sticking. Freeze for 2-3 months.

Since low carb pita bread is naturally soft, it works well to reheat it in the microwave without compromising texture. You can also reheat it in the oven at 350 degrees F, either from the fridge or even from frozen.

If you are using it as a keto flatbread pizza crust, you can add toppings to a fresh, refrigerated, or even frozen bread and bake immediately at 350 degrees F.

It’s simple as mixing the dry ingredients, adding the oil and water to make a pliable dough. As different brands of almond flour and coconut flour can slightly vary in cooking results, add the water gradually to form the dough as you may not need all of it.

To cook the keto flatbread you can use a frying pan, skillet or a griddle pan. The griddle pan will give those lovely line markings. When you cook the flatbread make sure that the pan is hot first, to ensure that the bread stays pliable and does not became too dry.

Can I replace the psyllium husk powder? If you don’t have psyllium husk powder you can use flaxseed as a replacement. The end result will not be quite as pliable.

Can I make this nut free? Remove the almond flour and just use the coconut flour & psyllium husk powder for an egg free coconut flour flatbread.
