This recipe is a combination of my absolute favorite skillet banana nut bread and a recipe from my bread machine’s cookbook. The resulting bread is the ABSOLUTE BEST without a lot of work on my part. As a working mom, this is invaluable!

Please be aware that you MUST scrape down the sides of the bread pan when the machine beeps for add-ins. At this point in the recipe, you will add the chopped nuts, but you may also find dough that isn’t well mixed stuck to the sides and bottom of the pan. Just use a rubber spatula and clean off the unmixed dough as you would in a mixing bowl. Be sure to use rubber or silicone…you don’t want to scratch the pan of your bread machine!

Speaking of nuts…you can add whatever type of chopped nuts you wish. I’ve added pecans, walnuts, and almonds at different times. All are very good! And if you aren’t a nutty person just leave them out. The banana bread is excellent without nuts, too.

So you are looking at three overripe bananas on the counter. Grab them, and mash them up. Then add a few other simple ingredients that you probably already have in the pantry and fridge. Within minutes, you have a loaf of bread started in the bread machine.

Once the bananas are mashed, beat up a few eggs. Then pour the ingredients into the bread pan in the sequence listed, leaving the dry ingredients to the last.

In a few short hours, you have a gorgeous loaf like this coming out of your bread machine. Remove the pan from the bread machine and let the loaf rest for 10 minutes, and then remove the loaf from the pan to a rack to fully cool. Nothing can be easier.

Our banana bread recipe was adapted from a traditional loaf recipe to one that will work well in the bread machine. I didn’t want you to have to buy different ingredients for that.

I don’t have that problem of the bread being too dense with using this recipe. One of the culprits can be not putting the ingredients in order, or it may be that you have too much moisture.

The traditional way of doing it is with a cake tester or the touch method to see if it springs back, but that is pretty hard in a bread machine.

One way you can tell is if the top still looks underdone. To fix that, just leave the bread in the machine with the heat that is already there for an additional 10 to 15 minutes. This should finish the baking process for you.

Bread may have differing results if your bread pan is an upright or horizontal pan. Experimentation is your best bet, too, but this loaf has been tried in both.

Yes. Substitute bread flour for of all-purpose using a 1:1 ratio. Bread flour contain more gluten and will give the banana bread a slightly higher rise and chewier crumb.

For bread makers that have a quick bread setting, use this. Some machines have a sweet quick bread program, and in that case you would use this setting. For bread makers without either, you can use the rapid rise program or the manual settings.

Slice the bread and keep it at room temperature stored in plastic bags, a bread box or cloth bread bag. It will stay fresh for up to 3 days. It can be kept in an airtight container in the fridge for up to 1 week. Banana bread can also be frozen for up to 6 months in freezer safe bags. Defrost at room temperature or in the fridge overnight. A quick defrost in the microwave also works great too!
