One of my first and favorite things to bake as soon as cranberries show up in the store is this sweet bread. It's quick, easy and so so delicious! I love a slice with my afternoon tea or coffee. It's great to pack in lunchboxes, wrap with festive ribbon and gift give for the holidays or bake a couple of loaves for friends. This Cranberry Bread is sweet, the crumb is soft and can be jazzed up with orange zest, pecans or chocolate chunks. One loaf is never enough as this treat disappears quickly!

Cranberry Walnut Bread

You can keep cranberry bread at room temperature for up to 2 days. It will last longer (up to 1 week) in the fridge, wrapped in saran wrap or placed in a freezer-safe bag.

You can freeze un-glazed bread for up to 3 months. Wrap completely cooled bread in saran wrap, then place in a freezer bag. Squeeze out as much air as possible. Place in the freezer.

Any sweet quick bread, or muffins for that matter, that sink in the middle is undercooked and had too much liquid added in the recipe. I've made this bread many many times over the years and it never sunk in the middle. It's a fail-proof recipe! Cranberry Bread With Orange Glaze

Room Temperature:Cranberry orange bread can be stored at room temperature in an airtight container for 2-3 days. Keep in mind that it will soften and get slightly gummy as it sits.

Freezer:To freeze this bread, wrap it tightly in plastic wrap followed by aluminum foil. Store in the freezer for up to 2 months. I recommend freezing without icing, then adding that before serving!

Thawing/Reheating:To thaw frozen bread, simply let it sit in the fridge overnight. If you want to reheat it, you can warm it in the microwave for 10-15 seconds at a time or until the desired temperature is reached.

Cranberry Almond Bread Recipe

You can! This recipe was developed using fresh cranberries, so those are recommended, but dried or frozen cranberries will work too if that’s what you have on hand.

If you’re using dried cranberries, I recommend adding them to a little hot water to soak for 10 minutes. This helps them plump up a bit for a little more volume and texture.

Baking with fresh cranberries can be frustrating, because the cranberries have a tendency to float to the top of the bread, meaning they’re no longer evenly distributed throughout the loaf.

Easy One Bowl Cranberry Orange Loaf

The best way to prevent this from happening is to toss the cranberries in a light coating of flour before adding them to the batter.

Alternatively, you can chop them into smaller pieces. Either one of these options work to keep the cranberries from floating to the top.

That change in color is simply a reaction between the acidity of the cranberries and the alkaline properties of the baking powder.

Cranberry Oat And Honey Bread

When fresh cranberries are in season, I start baking with cranberries. This bread uses one full bag of fresh cranberries. Fresh orange zest and orange juice is also added. Cranberries and orange are a perfect pairing!

I love to make several loaves of cranberry bread and store them in the freezer. When I need a loaf, I just pull out and allow it to thaw and then add the glaze. The bread is also delicious without the glaze.

I can't help myself with all these cranberry recipes. It seems like once cranberries are available in the store, I pick up a bag or two - or even three every time I shop. All those cranberries have to be made into something!

Yes, this bread can be frozen. Allow bread to fully cool. Do not add glaze. Wrap bread in plastic wrap and then place in a freezer safe bag.

This recipe can be made into mini loaves, instead of one regular size loaf. Use two mini size loaf pans. Bake at the same temperature (350°F) but reduce the baking time to 50-60 minutes.
