Disney'S Banana Nut Bread Recipe

What do you do when you’ve got extra ripe bananas you need to use up? We like to make banana bread. And this summer, we made made a copycat of a Disney banana bread recipe from Disney’s Riviera Resort. Even though it wasn’t a recipe to make from our summer bucket list, we wanted to give it a go anyways.

Do you ever had time to kill while at Walt Disney World…and not want to use a park day? We have…more times than I’d like to count. One of the last times this happened, we hopped on over and tried a snack – the banana bread – at La Petit Cafe located at Disney’s Riviera Resort.

I remember sitting outside enjoying the sunshine on a cool February day waiting for our time to get a tour of the Grand Villa there. (The Grand Villa did not disappoint…but that’s another post for another day.) We grabbed some drinks and a snack. I enjoyed a slice of the banana bread. It was nice, just the right hint of banana, and moist.

We’ve found what we think is a great copycat recipe. How does it compare? You tell me. I’d love to hear feedback if you try it…or any modifications you’ve made.

I’m a sucker for a good banana bread. I have more recipes for it than I’d like to admit. Wouldn’t you think my collection’s complete? Nope! Can you ever have too many recipes?

And if you enjoy new twists on your food, this particular recipe is great for making banana bread French Toast or banana bread pudding. Yummy!

The best way to keep banana bread moist is to tightly fold plastic wrap around it. The wrap helps to keep the moisture in the bread. This works well for most sweet breads.

The most common reason your bread is not cooking fully in the middle is because your oven isn’t quite hot enough. And in some cases, it may be too hot which cooks the outside of the loaf more quickly than the inside. You can use an oven thermometer to ensure your oven is at the correct temperature before you place your bread pans in the oven.

You want to “spice” up your banana bread? Just add no more than 3/4 cup of your favorite to the recipe above. It shouldn’t affect the baking time at all. Here are some suggestions:

When using spices…less is more. You can add in one spice or blend a few together to your personal taste. Just remember that too much spices will overpower the flavor of the bananas. I recommend no more than 1/4 teaspoon of spices.
