Paleo Savory Bread Recipe

This gluten free, paleo & keto savory zucchini bread is a beautiful addition to your summer (or year round!) repertoire. It’s flavorful, tender, moist and incredibly versatile!

With this low carb zucchini bread you can whip up bruschetta, sandwiches, or simply serve it up as a side or entree. So fairly in love with this keto zucchini quick bread guys! I’d been looking to share a solid savory quick bread as an alternative to our proper (yeasted) grain free keto bread, and this is it.

And while quick breads are always more ‘cakey’ than their yeast counterparts, this one goes great lightly toasted with garlic oil (or butter!) and topped off with fresh mozzarella, tomatoes and basil (think classic Italian bruschetta!).

Healthy 5 Minute Gluten Free Paleo Bread

Another great pairing is as a simple side to a summer barbecue, served alongside a generous helping of pesto or chimichurri sauce. Or as an entree with a generous spread of goat cheese and sun-dried tomatoes. You’ve got loads of options here, but these are my current favorites.

I’m also very fond of topping off the zucchini loaf with cherry or heirloom tomatoes and a handful of basil leaves. As aside from added taste, these guys also keep your loaf from over-browning on top (which is awesome, as this one has a longer baking time!).

Finely grate the zucchini and then wring it out veeery well. If you fail to do so, you’ll be adding more liquid than desired into the mix, and your zucchini bread will be wet rather than moist.

Cheesy Zucchini Bread

I do this by wrapping the grated zucchini in a thin kitchen towel or cheesecloth. Then just wringing it out until almost all liquid stops coming out.

You can me this zucchini bread with both dairy or dairy free. Think grass-fed butter and sour cream, or coconut oil and cream. And you can also use ghee.

Almond flour. You truly need a super finely ground almond flour here, as if you use meal your bread will turn out dense and oily. Super fine almond flour brands include Anthony’s,  WellBees and Bob’s.

Flaxseed meal.  You’ll want to use golden flaxseed meal (we use Bob’s), and regrind the flakes in your (very dry!) bullet or blender until finely powdered. Great way to avoid slimy breads. If intolerant to flax, you can use finely ground psyllium husk (but keep in mind we prefer the flax version).

Psyllium husk powder. Same as with your flaxseed meal, you’ll always want to regrind your psyllium husk. We always favor NOW brand as it doesn’t turn bread purple. You can substitute it with more flax, but your bread may lose some elasticity and some rise.

4. Squeeze as much excess liquid out of the zucchini and carrot as you can. Add to the eggs along with the cheese and whisk well.

5. Add the egg mix to the dry ingredients. Mix well to combine. Pour the dough into the prepared loaf tin and sprinkle with pepitas.

6. Bake for 40-45 minutes or until the top starts turning golden and a skewer comes out clean. Remove from the oven and transfer to a wire rack. Allow to cool for five minutes before slicing into 1.5cm thick slices.

Easy Herb Quick Bread Recipe

* Please keep in mind this nutrient-dense Paleo Veggie Bread will not rise like traditional loafs. We prefer to toast each slice of veggie bread before eating.

To freeze this loaf: cut into slices and freeze with a piece of baking paper between each slice and pop into zip lock bags.

Rosemary Almond Flour Pumpkin Bread

I love making this bread recipe from time to time because its texture is very similar to real bread, especially the darker German and Austrian types of bread. In fact, I first made this recipe while travelling through Austria. We rented an Airbnb with an oven and I wanted to make a few things that we could bring on hikes with us.

I didn’t have a baking tin but decided to shape the bread loaf by hand and simply bake it on a flat oven sheet with some parchment paper underneath. It worked out perfectly and everyone enjoyed a slice or two with avocado and ham.

I wanted to add some savoury flavours to the bread so I used some onion and garlic powders, and some dried herbs. Therefore, this bread is best paired with non-sweet foods and toppings. You could easily make this same bread without those seasonings if you want to use it for toppings like nut butter and honey, but I prefer to avoid the sweet stuff, so I deliberately make it that way.

Once the loaf is baked, I allow it cool completely, then slice a few slices for the freezer (in Ziplock bag) and enjoy the rest over the next few days. You can find most of the ingredients in health food stores and online these days. Almond meal can be replaced with other nut meals, linseed meal with flaxseed meal, and cassava flour with tapioca flour (although I think cassava flour has a slightly better, denser texture compared to the more fine, starch-like tapioca or arrowroot). Buckwheat or quinoa flour can be used in place of cassava if you tolerate those non-wheat flours.

This super easy savoury paleo bread loaf can be baked with no tin. It lasts well and freezes beauifully so you don’t have to eat it all at once.
