Yes - if you don't have rice flour you can substitute it with an all-purpose gluten-free flour blend and leave out the tapioca.

I have also tried replacing the rice flour with buckwheat flour, and while the recipe worked, the texture was much heavier and it had a stronger flavour. I would definitely recommend rice flour over buckwheat flour for this reason!
No! The purpose of the tapioca is to bind it together so you don't need to add xanthan gum too. If you don't have tapioca, I wouldn't recommend replacing it with xanthan gum either - just use an all-purpose gluten-free flour blend in place of the rice flour.
This Gluten-Free Vegan Bread keeps well covered in the fridge for a good few days. If not eaten on the day it's made, it's best toasted before eating.
Cassava Flour Bread (paleo)
If you're freezing it, you can just slice it up and put the whole thing in the freezer. Then when you want to eat it you can just pop the slices of bread in the toaster straight from frozen.

Hi Erin! Yes, please try again. Swapping flours can affect how much water a bread mixture needs. Also, play around with the type of pan you use. It can make a difference. I’ve been working on some new recipes for the bread machine and you should see how much better the yeast-free loaves bake up. They are incredible! That being said, baking this recipe with steam in a larger oven could also help with the rise. Make sure your oven is nice and hot when you bake the dough. And, the type of plant-based milk you use is important. I suggest homemade hemp milk because it’s only two ingredients, the seeds plus water. But if using store bought brands, make sure they are not filled with gums and other ingredients that could way down the texture to the bread.

Hi Gigi! I’ve personally never tried the yeast-free bread recipe with dairy milk so you might have to experiment. If the raw milk is too creamy you could mix half milk with half water to dilute it a bit.

Hi Dawn! You could either increase the other two flours with more. So more buckwheat flour and more white rice flour or add a third flour such as sorghum, GF oat or millet. Replace by weight, so 50 grams.

Did you use dark buckwheat flour? It’s definitely stronger tasting. Or did you try a light buckwheat flour? A substitute for buckwheat flour for this recipe would be: almond meal/flour, sorghum flour, millet flour or more brown rice and oat flour to replace the 1/2 cup (80 g) of buckwheat flour.
Hi Janelle! I did try with just buckwheat flour once instead of soaking buckwheat groats and the results is better with the groats. It works with flour but you have to make sure that the right amount of hydration is added. You might have to experiment. Watch the video (https://youtu.be/U-oLADkIWpo), and observe the texture of the buckwheat groats batter and try to mimick a similar consistency with the flour and apple. Please note that you will have to blend the ingredients the same way. If you do try it, please come back to let us know if it worked for you.

Soft Gluten Free Vegan Bread Recipe
Simply combine your dry ingredients in a bowl then pour in two wet ingredients and knead for a few minutes. Done! Once baked the bread looks rustic and artisanal with a crusty exterior and soft bouncy centre. Feel free to add a few tablespoons of your favourite seed mixture to the dough to create a seeded loaf. I’ve kept the bread recipe basic so you can add whatever you like and get creative with your additions. Some of my favourite inclusions are kalamata olives, rosemary, linseeds, pepitas, caramelised onion and fennel seeds.
The magic ingredient in this recipe is psyllium husk. Not only is psyllium husk high in fibre and great for gut health, but it also adds that much needed stretch required in gluten-free baking. Psyllium has excellent water solubility properties so it thickens quickly when whisked with water to create a ‘glue’ that helps form a ball of dough that can be kneaded into any shape. I have used whole psyllium husk in this recipe, not psyllium husk powder which is more concentrated. If you use the powder reduce the quantity of psyllium by half.
Tapioca and buckwheat are my preferred flours in bread baking. Tapioca provides that lovely bounce and buckwheat adds structure to the loaf in addition to a wholesome fibre and protein boost. Tapioca is derived from the cassava plant and buckwheat is a seed so both flours sit in the ‘grain free’ category.

I do not recommend replacing either of the flours in this recipe. They both serve unique purposes and work well together! The gluten-free all purpose flour in this recipe can be one either with or without xanthan gum. I like to use this one from Bob’s Red Mill, but I’ve successfully tested it with a few different brand with great results!
