Can Apple Cinnamon Bread be frozen? Yes! Let the bread cool completely and then wrap the bread (in slices or as a whole loaf) in two layers of plastic wrap followed by a layer of aluminum foil. Place in a freezer ziploc bag and freeze for up to 2 months. Bread should be thawed at room temperature. Simply unwrap the number of slices or whole loaf and let come to room temperature. Enjoy!

Gluten Free Apple Bread

I love baking with apples this time of year and this quick bread really hit the spot. The batter comes together so easily and my kitchen smelled delicious as it was baking. I also love that is healthier than your typical quick bread.

I used natural almond butter but regular almond butter will also work. You can also substitute with other nut butters. I don’t recommend peanut butter only because I think the peanut butter flavor is too strong and overwhelms the delicate apple flavor.

The apple flavor for the bread is from using applesauce in the batter and also mixing in fresh apple pieces. You can use sweetened or unsweetened applesauce. I prefer using unsweetened so that I can control the sweetness myself when making the batter.

Cinnamon Apple Pie Bread

Using brown sugar makes this bread tastes more like Fall. But you can use white granulated sugar if you don’t have any brown sugar.

Using fresh apples adds apple flavor to the bread and helps keep the bread moist. Choose an apple variety that is sweet.  I used fuji apples. Avoid using tart apples because there is not enough sugar in the bread batter to sweeten tart apples.

Applesauce

Even though the bread has no flour, you can’t tell. The texture of the bread is similar to bread made with flour. The bread is also very moist and soft.

Chock-full of tart apples, it has a generous cinnamon swirl running through the center and a crisp sugared top. Similar to other fall quick breads, like pumpkin or cranberry nut, it’s easy to throw together – and it’s really just a cake baked in a loaf pan. My kids claim I ruin everything with nuts, so I’ve intentionally left this apple bread nut-free, but I think a handful of walnuts or pecans would be delicious mixed into the batter. Be sure to wait until the bread is completely cool before slicing; you can even let it cool overnight, as it keeps moist for days. With the mixer on low, gradually add the melted butter followed by the milk and vanilla, and mix just until evenly combined.

Line the long side of the pan with a parchment paper “sling” and spray lightly with nonstick cooking spray again. Spoon about 2/3 of the batter into the prepared pan.

Using a butter knife, swirl the layers by making a zig-zag motion through the batter once in each direction (don’t overdo it!)

Bake for 50 to 55 minutes, until the bread is golden brown and a cake tester or toothpick inserted into the center comes out clean. Let the bread cool on a rack for about 30 minutes.
