Bajan Banana Bread Recipe

This is a great recipe that gets rave reviews and it’s no wonder why- it truly is the Best Banana Bread. With a perfectly moist texture, a slightly crunchy top and room for mix-ins galore, I know you’ll love it too. All you need are some overripe bananas (and maybe some chocolate chips, ) and you will be good to go. Truly this is the perfect banana bread!

This is an easy recipe that only used one bowl and comes out perfectly every time. It is full of sweet banana flavor, uses basic ingredients you most likely have at home and results in the most delicious banana bread! Making it is as simple as combining the dry ingredients, adding the mashed bananas and other wet ingredients, then adding any mix ins you may want like nuts or chocolate chips and you are good to go. It’s a quick break recipe every baker should have in their bag of tricks!

Yep- I do it all the time. Just line a muffin tin and fill each well about 3/4 of the way full. You will reduce baking time to about 20 minutes.

Bajan Sweet Bread

In a large bowl whisk together the melted butter, and sugars. Add the eggs one and a time and vanilla and whisk until smooth.

Sprinkle the flour, baking soda and salt over the butter mixture and stir to mix until just combined. Fold in the bananas and sour cream.

Pour batter into prepared pan and bake 60 minutes or until crust is golden brown and a toothpick inserted into the center comes out clean. Cool until warm before serving.

Honestly, there are various banana bread recipes that are never worth making again. They are good, but not great!  Many banana bread recipes are dry, lack a good banana flavor and are way too sweet.

This healthy banana bread recipe is more than great! It’s absolutely divine! It is an easy banana bread recipe that turns out perfectly sweet with a fantastic banana flavor. On top of that, this moist banana bread melts in your mouth from the first bite to the last.

There are a few secrets to great banana bread. First off, your bananas need to be extra ripe.  Bananas with dark mushy spots are perfect. In fact, the best banana bread recipe uses overripe bananas that have fully developed sugars and a nice soft texture. It makes the bread very moist and brings out the full flavor of the bananas.

It is very important that you do not over mix the batter. Over mixing the batter will develop the gluten in the flour, making the bread very rubbery. As well, mixing the batter to much can overwork the leavening. Overworked leavening will not rise properly and oftentimes your banana bread will be heavy and raw in the center.

A good rule of thumb is to sift your flour with the other dry ingredients first. Next, add your dry ingredients to your wet. Gently fold in the ingredients using a large wooden spoon or spatula. Mix until all the ingredients are barely wet.

If you like a lighter loaf, cream the butter and sugar together before adding the bananas and dry ingredients. This technique adds air pockets to the mixture, making it lighter and fluffier.  But if you like a dense loaf, skip the creaming method.

To make muffins, fill the muffin tins with liners. Fill each cup about ¾ full. This banana bread recipe makes about 8-10 muffins. There’s something so comforting about traditional banana nut bread. The sweet, moist, melt-in-your-mouth dessert (or breakfast😉) is incomparable. Then the nuts and vanilla just add to the rich flavor factor (I used pecans, oh yeah!). Not to mention the best reason to buy overripe bananas on a quick sale.

I highly suggest doubling the batch because banana nut bread is always better the next day, and it freezes well. Just wrap it whole or in individual slices tightly with a cling wrap and keep it in an airtight container once cool.

High Altitude Banana Bread Recipe

If you freeze the slices separately, you can thaw just what you need to satisfy your craving. And you can reheat it in a toaster, microwave, or preheated oven until warm.

Two reasons come to mind. First, too much flour or too little moisture. Try reducing the flour by a tablespoon or two and see if that helps. Second, overbaking tends to dry the bread out. Everyone’s oven is different, not to mention altitude. Just start checking for doneness 10 minutes before the recipe recommends.

The riper the bananas, the better. Overripe, but not rotten, bananas create a sweeter and moister banana bread. The ones that have lots of dark spots on the skin (or dark brown peels) and are soft to the touch. My favorites have a slightly fermented smell.

The top should be firm to the touch, and a toothpick, skewer, or thin knife should come out clean with no signs of wet batter when you stab it into your banana bread.
