Gluten Free Sausage Bread Recipe

Here's my gluten free sausage rolls recipe that's super easy to make with just 5 ingredients. It's dairy free and low FODMAP too.

I’m gonna start this by apologising for taking so long to finally create this… but the wait is finally over! Here’s my 5-ingredient gluten free sausage rolls recipe which is also dairy free and low FODMAP.

If you’re from the UK, you’ll know just how iconic a sausage roll is! Then… how come they’re so hard to come by if you’re gluten free?! Well, hopefully they won’t be for much longer if you’ve got my gluten free sausage rolls recipe to hand…

Gluten Free Sausage & Egg Breakfast Sandwich

I mean, c’mon. Greggs are literally shovelling sausage rolls out of their doors, but the last time I ate a sausage roll was about 6 or 7 years ago!

(I think they do/used to do gf sausage rolls in M&S? Please let me know in the comments if they still do?)

And for me, that’s a great injustice for all of us gluten free folks. After years of missing out on food, I can’t believe that 2019 hasn’t brought us a gf sausage roll that’s as good as and as readily available as they are for muggles in Greggs!

Speaking of which, if you could eat *anything* in Greggs, what would you eat? I think I’d go for an iced finger personally! Is that boring?!

So I did what I always do in those situations. I went home, put my apron on and got creative in the kitchen!

(and when I say apron, what I really mean is that I wear a nice, new, white top, don’t wear an apron and then get splatter stains on it that never come out in the wash. oops!)

But you know what? I think we can do even better than a Greggs sausage roll! I mean… I don’t have the MOST fond memories of eating a Greggs sausage roll waaaay back when I could eat gluten. Does anyone remember when Greggs was still Bakers Oven?! Now I do feel old!

So I decided instead to add a few finishing touches to make my gluten free sausage rolls recipe a little bit special.

So yeah, they are the beautiful little bites of light, flaky pastry with a meaty filling that you’ve been missing all these years.

But I also added a little wholegrain mustard *inside* the pastry which is AWESOME along with the sausage meat – it also adds a little extra texture to each bite.

Plus. I added sesame seeds on top which not only act as a finishing touch visually, but also taste lovely when they’re toasted. Trust me, those little extra touches make all the difference!

I love them fresh out of the oven and dipped in ketchup, but you could try any sort of dip you please.

And if you need some more inspiration for a gluten free picnic, I have a whole range of gluten free picnic ideas here.

These gluten free sausage rolls will keep for around a week in the fridge and you can also make them ahead of time and freeze them.

The gluten free puff pastry can also be made the night before and chilled ready for assembling and baking in the morning.

It's usually just some of the cheaper brands you might need to be careful of, as they use wheat or non-gluten-free oats to bulk the sausages out.

You could make these with a standard pork sausage or go for a flavoured version, such as pork and apple, chorizo-style or anything you fancy.

Sausage Breakfast Focaccia

The first thing you'll need to do for this recipe is to whip up a batch of my gluten free puff pastry.

It's a simple rough puff pastry and I promise it's worth the effort the flakiest, most delicious gluten free sausage rolls ever.

Sausage

You want the puff pastry to be as cold as possible when when it goes into the oven for maximum puff potential.

Sicilian Sausage Bread (bignolati)

Before baking, make sure you brush them with beaten egg so they go nice and golden - and sprinkle with sesame seeds if desired.

Steve's mum is always my best judge because she doesn't like a lot of gluten free foods, but she really enjoyed these.

This Sausage Bread might be the most versatile recipe in your recipe box! It’s perfect as an appetizer or a weeknight dinner recipe. You can even serve it on game day or take it along on picnics or potlucks!

With how versatile this Sausage Bread recipe is, you’ll always have a simple and easy recipe on hand for all sorts of occasions – and the ingredients can easily be changed up to whatever you have on hand or whatever you feel like eating.

One of the things I love most about this recipe is how versatile it is! I can almost guarantee that wherever you serve it, it won’t last long – so you might want to make two loaves! (I’m speaking from experience here.)

Gluten Free Stuffing

It’s also easy to add ingredients to make this even more filling! Sometimes, we like to add green bell peppers, onion, and mushrooms that have been sauteed in butter. Other times, we add pizza sauce – it’s a great change on pizza night! Tuck in some pepperoni instead of sausage for a new twist. Or add sausage AND pepperoni. I’m not judging. 🤩

This is a recipe you are going to want to save. I find myself coming back to make this time and time again! I hope you and your loved ones enjoy it!

Second, cook your sausage. Crumble and brown the sausage in a skillet over medium heat until it’s no longer pink. Drain if desired!

Third, prep your bread. Open the tube of pizza dough onto the prepared baking sheet and straighten the edges into a rectangle. Sprinkle cooked sausage and Mozzarella cheese over the dough, leaving about 1 inch open along the edges. Roll up the dough jelly-roll or cinnamon roll style, crimping the seam closed and sealing and tucking the ends under. (Make sure the bread is seam-side down on the baking sheet!!) Finally, brush the loaf with a beaten egg.

Finally, bake your sausage bread. Bake the dough in your preheated oven for 25-30 minutes or until the crust is golden and the bread is cooked through. Allow loaf to rest 10 minutes before slicing, then enjoy!

Any kind of “crumble” sausage you like! Personally, I use Jimmy Dean or Johnsonville. I’ve made this with the regular Jimmy Dean pork sausage rolls and the hot Jimmy Dean pork sausage rolls. I also use Johnsonville Italian sausage, not in the casings. It just depends on our mood, what I have on hand, and what might be on sale!

I think any kind of sausage that “crumbles” is best for this bread, although you can experiment with diced sausage (kielbasa, smoked sausage, or other ring-type sausages) if you prefer. I’ve never tried it that way, but I imagine it would work fine.
