Banana Bread Recipe Using Coconut Flour

This is the best Coconut Flour Banana Bread you’ll ever try. It’s easy to make, not overly sweet, and reminds me of the real thing– without using gluten or dairy.

I’ve said it before, but I’ll say it again: Coconut flour is SO tricky to work with. You’d think by now, after developing recipes like my Coconut Flour Zucchini Bread, Coconut Flour Carrot Cake, and Coconut Flour Lemon Poppy Seed Muffins, I would have a pretty good idea of how to make practically

Easy

However, it still took me 6 different attempts to get this recipe right. My picky toddler has deemed this coconut flour banana bread to be the “best ever, ” so I suppose my effort was worth it!

Coconut Flour Banana Bread [paleo, Gf, Df]

The resulting Coconut Flour Banana Bread is moist, without being gooey in the middle, and is also not overly sweet. It could still pass as “normal” banana bread, which is why I added just a touch of natural sweetener, but you could definitely omit the coconut sugar entirely if you don’t mind having a less-sweet bread for your family.

(See the notes below the recipe if you are interested in using maple syrup instead. I tested that, too, but the results are more moist.)

Keep in mind that the riper your bananas are, the sweeter the banana bread will be, so be sure to use bananas with LOTS of black spots on their skin for best results.

When making this recipe, be sure to use the “scoop and swipe” method for measuring. I dip the measuring cup into the bag of coconut flour to get a heaping scoop, then use the back of a knife to swipe the excess off the top.

I’ve also included the weight of the ingredients in grams in the recipe below, if you prefer to measure using a food scale.

Like most coconut flour recipes, this one does require more eggs than a recipe using any other type of flour. Coconut flour is freakishly absorbent, and because of that it requires eggs for both structure and moisture.

Trust me when I say that I used as few eggs as necessary to produce a good result. On the bright side, the eggs do give this bread more protein in each slice.

Coconut flour tends to stick to pans more than other varieties of flour, so I like to line my loaf pan with parchment paper to guarantee the banana bread will easily release from the pan later.

To make your life easier, spray the pan with a little bit of oil, then press the parchment paper into the bottom of the pan. The light coating of oil will hold the parchment paper in place, so it doesn’t wiggle around while you pour the batter in!

I slightly modified this recipe to help prevent the soggy middle that some readers were reporting, and I added the weights for those who like to be exact with a kitchen scale.

If you are still in love with the original version, I only changed 3 things: I reduced the number of bananas from 4 to 3, I added a teaspoon of baking powder to help it rise even more, and I increased the coconut sugar from 1/4 cup to 1/3 cup. Feel free to change these things back if you prefer the original recipe.

Easy Coconut Flour Banana Bread Recipe

My kids adore this banana bread with coconut flour with meals or as a sweet treat. The past couple of months I had made this banana bread recipe for them a couple of times and I thought I’d see if I could adapt the recipe to be gluten free.

As I enjoy baking with coconut flour, that was my flour of choice. The resulting banana bread is moist, tasty and you won’t even believe it’s gluten free.(And, as an update – I’m still making this recipe, exactly as shared, years later!)

As mentioned, I chose to use coconut flour as my gluten free flour of choice. When baking with coconut flour, you only need about a quarter to a third of the recommended flour.

Because coconut flour is super absorbent, you need to also increase the quantity of eggs to ensure you don’t end up with a dry baked good.

I chose to use unsalted butter. If you’d prefer to create a dairy free, paleo friendly banana bread then swap in 1/3 of a cup of melted coconut oil instead.

Be sure to use spotty, extra ripe bananas. They will be easy to mash and perfectly sweet for enjoying in banana bread.

Regarding the sweetness, I chose to use 1/3 of a cup of coconut sugar. When blended with the sweet bananas, we found it to be perfectly sweet. You may prefer a half a cup (or more) of coconut sugar. Or, feel free to use sugar, maple syrup or your sweetener of choice in this recipe.

Start by gathering all of your ingredients, getting out a loaf tin and lining it with well greased baking paper. Also, pop on the oven to preheat to 180C/350F.

Get out a large bowl and mash the bananas, using a fork. I often get my kids to help me with this step, they take great satisfactions in mashing the bananas to a gooey bowl full.

Place the butter in a saucepan, move it to the stove top over medium to high heat and cook, stirring often, until completely melted.

Crack the eggs into a small bowl and whisk with a fork until smooth, then pour the whisked eggs over the banana mixture, along with the vanilla. Stir until fully incorporated.

This gluten free banana bread with coconut flour tastes like a flour full baked treat. It’s moist, sweet and the perfect treat.

Banana Coconut Bread

There are so many coconut banana bread recipes out there, but none of them come close to achieving the texture of a wheat based quick bread.

If you’ve made any of my healthy desserts before, you’ve probably have all the ingredients in your pantry as we speak. If not, they can easily be found at your local grocery store. Here is what you’ll need:

This has to be one of the easiest recipes to make. We made everything in one bowl and you follow a simple 2-step process.

Almond Flour Banana Bread Recipe (gluten Free)

Start by adding the dry ingredients in a small bowl and whisking together until combined. In a large mixing bowl, add the bananas, maple syrup, vanilla extract, coconut oil and eggs until combined and smooth. Gently fold through the dry ingredients into the wet ingredients until combined.

Now, transfer the batter into a lined loaf pan and bake for 50-55 minutes, or until a skewer comes out mostly clean. Remove the bread from the oven and let it cool completely, before slicing and serving.

For this recipe, coconut flour is key to achieve the perfect texture and flavor. If you’d like to use all purpose flour, try a vegan banana bread.
