Although, if you live in America then you probably know of approximately one variety of banana- the Cavendish banana. It’s the bright yellow one you find in grocery stores for about 79 cents a pound. The Cavendish has bunches that grow three meters above the soil (they are a fruit, but are actually an herb as well), with a shape that makes them easy to pack, and a beautiful color to boot.

I’m pretty sure the fact that the Cavendish banana is significantly less flavorful than other varieties wasn’t considered a major problem when they were chosen as the mass production fruit of America way back when, and since we’ve not got other choices I suppose we are perfectly fine with that.

However I visited an island in Samoa last year and they had different banana varieties and heavens to betsy they were delicious! So now I look for other banana varieties whenever I’m at the grocer. You can make muffins or mini loaves with this banana bread recipe, just reduce the baking time. For muffins, I recommend 18 to 24 minutes. For mini loaves, I recommend 25 to 35 minutes. Bananas that are nice and unblemished yellow may be perfect for snacking on, but they're not perfect for making banana bread. They haven't yet developed enough sweetness and strong banana flavor to bring a really nice banana flavor to the bread.

The best bananas for making banana bread are those that have gone past their prime. In fact, the very definition of overripe is too ripe or past its best. And some definitions even go so far as to say beyond ripeness toward decay. So when reaching for those bananas to make your bread, you want those that have gone past their best for snacking -- because that is exactly what makes them the best for bread!

Once the butter and brown sugar are creamed together, add in a couple of eggs and a touch of vanilla extract. Then, alternately mix in the bread's dry ingredients and the mashed banana-buttermilk mixture.

Finally, fold in a cup of chopped pecans. And bake the loaf up until it's cooked through and golden brown, which takes about an hour.
