This keto blueberry bread is so moist and fluffy. We all loved the zesty lemon flavoured sponge and the fruity blueberry bursts. It's perfect as a sweet breakfast or as an afternoon treat.

This easy low carb blueberry bread is a reason to joyfully jump out of bed in the morning. It is zingy, fruity and simply happiness-inducing.

Step 2: In a second bowl, add the egg yolks and butter. Whisk with an electric mixer. Then whisk through the sour cream and lemon juice.

Step 3: Stir together all dry ingredients in a third mixing bowl. Add the dry ingredients to the yolk mix, together with ½ of the stiff egg whites. Blend until combined.

Tip: Taste the batter now so you can adjust the sweetener if necessary. Option to add more lemon juice and zest too.

Step 6: Fill the batter into the loaf pan and level with a spatula. Bake in the oven until golden and you can insert and remove a skewer without crumbs sticking.

Step 7: For the sugar free icing, stir together powdered sweetener and lemon juice. Spoon it over the cake or put it in a ziploc bag and snip off a corner, then drizzle over the fully cooled loaf.

As with all keto bread, check after 40 minutes of baking. Once it is golden on top, loosely cover it with aluminium foil to prevent over-browning.

Dairy free blueberry loaf: Use coconut oil instead of the butter and replace the sour cream with either coconut yoghurt or coconut milk (from a can).

Growing up, my mom would always spend part of her weekends in the kitchen baking. She loved to send my sister and me off to school with something homemade and sweet in our lunchboxes, and always tried to change things up. While she often made crumbles and various fruit tarts, she often made a variety of quick bread.

Mom’s quick breads were one of my favorite things she made, and she always changed up the flavors depending on what was in season. While she usually made a banana or apple version, and sometimes, she made a blueberry version! To this day, it remains one of my favorites, and I’ve begged my mom for the recipe. Although her version is far from low carb, it’s easily adaptable and now I can enjoy this bread with a low carb twist!

Keto Blueberry Lemon Bread Recipe With Almond Flour

I’ve been meaning to share a keto blueberry bread recipe for quite some time. They’ve been my go-to dessert or treat to enjoy with my afternoon coffee, and my favorite way to enjoy blueberries! This bread uses simple ingredients and the hard part is waiting for it to cool down to dig in!

No sugar and no grains are needed, but you’d never tell. The texture is super moist, soft, and tender on the outside. The bread is sweet and bursting with blueberries, without being overpowering.

Start by mixing together your dry ingredients in a small bowl until combined. Next, in a separate mixing bowl, whisk the wet ingredients until glossy and smooth. Gently stir in the dry ingredients, before folding through the blueberries with a rubber spatula.

Now, transfer the batter into a greased loaf pan. Bake the bread for 45-50 minutes, or until a skewer comes out mostly clean. Remove from the oven and allow the bread to cool in the pan completely, before slicing up.

Keto Lemon Blueberry Zucchini Bread

My homemade keto blueberry bread couldn’t be easier to make! You need just one bowl (minus the glaze) and six simple steps:

TIP: Stir in the eggs and almond milk before adding the melted butter, so that any temperature changes don’t shock the butter. Room temperature eggs are even better.

TIP: The batter will be somewhat thick, not pourable, which is normal. You’ll want to round the top slightly before baking since it only rises a little.
