Bread Machine Dill Bread Recipe

I’ve been making bread for a long time, and I would venture a guess that I have tried at least 100 recipes. I’ve probably thrown together at least that many with no recipe at all. When the girls were little, I often made different kinds of bread every week – so you know they had the chance to try a lot of different flavors. But, when I gave them the choice of what kind I should make, which bread did they always ask for? Cottage Cheese Dill Bread.

And I didn’t mind, because this is one of my favorites as well. It is light in texture, but still hearty enough for sandwiches, and the combo of dill, plus just a hint of onion is just amazing. The only reason I don’t make it more often is because I find it so utterly irresistible that it’s embarrassing. I have zero self-control when it comes to this stuff.

Dill

As I have with many of my favorite bread recipes, I’ve turned this Cottage Cheese Dill Bread into a no-knead stand mixer recipe – the only kneading is just to shape it. The mixer does the rest, while you stand back and dabble in bits of flour every minute or so, until it turns into a silky ball of perfect dough. If you don’t have a stand mixer, or you just like to make it old school, use a large bowl and a wooden spoon for mixing.

The Man of the House and I used to participate in a CSA (Community Supported Agriculture) program. Once a week we’d get a variety of veggies fresh from the farm.

I knew I’d seen a recipe for dill bread and thought this would be the perfect opportunity to give it a try.

I was a bit dubious about the cottage cheese in the recipe. I tried it anyway and you know what? The bread was VERY good. It had a lovely taste and texture.

Herb Bread For Bread Machine Recipe

I’ve seen some recipes for dill bread that recommend you warm the cottage cheese before adding to the bread pan. This is because the temperature of the cold cottage cheese might affect the yeast and cause the bread not to rise as much.

If your machine is like my Zojirushi and has a warming cycle, that’s not needed. If your machine doesn’t have a warming or preheat cycle, you’ll want to warm the cottage cheese.

Dilly Cottage Cheese Bread, Gluten Free

Follow the instructions that came with your bread machine in terms of which ingredients to put in the bread machine first. (With my bread machine, I add the liquid first.)

Check on the dough after five or ten minutes of kneading. Just pop the top of the bread machine and see how the dough is doing. It should be a smooth, round ball. If needed, you can add a little water or flour.

It’s got great flavor and it’s a wonderful dinner bread filled with cottage cheese, dill weed, and onions.

While this dinner bread is great to serve with butter, it’s also a nice bread to serve with dipping oil as you enjoy your favorite pasta. I also like to serve it for breakfast with Fried Eggs and bacon.

I love the flexibility of breadmakers. I can pop the ingredients for a loaf of bread in the breadmaker in 5-10 minutes time. And, in a few hours, out comes a great tasting bread. It’s especially easy to throw a loaf in the breadmaker for meals I’m taking to others.

I made this loaf for the family of a new mom in our church last week. It was so quick and easy. I keep most of the stuff on hand regularly to make bread in the breadmaker. The only thing I had to buy for this recipe was the cottage cheese.

I don’t always have time to knead my own bread. This option certainly is a quick and easy way to have delicious homemade bread. When I initially posted this recipe in March 2013, it was right before I purchased my good Canon camera. My pictures were taken on an inferior iPhone 3 or 4 and inside my house which has such a dark tinting on the windows (because of our Texas sun) that I don’t get enough light.

Olive Oil Herb Bread Made In The Bread Maker

As a result, the pictures were less than what I would really like to use for presentation. I recently remade this recipe (February 2015). I shot a few new pictures so you can get a better idea of what this recipe looks like under better lighting and with a better camera lens. This is still one of our favorite homemade breadmaker breads!

This is a great bread for dipping in olive oil with herbs too. Place some olive oil, freshly ground black pepper, parsley, and any other seasonings you desire in a small bowl or on a plate and dip away!Or you can always eat the bread the old-fashioned way with lots of butter.

Bread flour has more gluten so the particles of bread will adhere together better and not get crumbly and fall apart. Regular all-purpose flour does not have as much gluten.

Buttermilk Dill Bread (bread Machine)

Allow bread to sit in canister about 15 minutes to cool. Remove from canister. Butter the tops and sides of the loaf to prevent hardening. Allow bread to rest another 15 minutes before cutting down into slices.

NOTE: all-purpose flour does not contain the necessary gluten to bond the ingredients together as well as bread flour. The bread may turn out crumbly. For best results use bread flour.

NOTE: I recommend using Fleischmann's yeast or bread machine yeast in any yeast bread recipe. Red Star yeast just doesn't work as well.
