You may remember my recipe for gluten free banana bread with butternut squash. It’s one of my favorites of all time. Yes, all time. But I couldn’t help but strip it down to the absolute essentials and take it back to classic banana bread land.

The ingredients for this scrumptious, hearty bread begin with three overripe bananas. Then come essentials you likely alreadyhave on hand, such as eggs (or chia/flax eggs), vanilla and coconut oil. To sweeten things up a bit more I relied on a mix of honey, cane and brown sugar for a variance of flavor and texture.

Then comes the gluten-free goodness: a mix of gluten free oats, almond meal and my favorite gluten-free flour blend (or sub other gluten-free blends with varied results). Check out our Guide to Gluten-Free Flours for more guidance!

I could hardly wait to slice in, but patience is key here. You need to wait a good hour before cutting into this baby, else it will crumble and fall apart. That’s what you don’t want.

This paleo honey nut banana bread is one of my newest faves, and I was eating slices of it all day on Christmas to keep myself from eating ALL the cookies and giving myself a major stomach ache. It’s fluffy and filling and full of banana and honey flavor, with the delicious crunch from the toasted walnuts. Swoon!

I sweetened the banana bread with just a quarter cup of Wholesome Organic Honey, which I found in the baking aisle at my local grocer. It really doesn’t need any more than that, since the bananas already add so much natural sweetness of their own!

Wholesome‘s organic honey comes from protected hives in the remote forests of Brazil – this helps ensure it’s USDA certified organic, which is hard to ensure with local honey since only 1% of US farmland is organic. It’s also pesticide free, fair trade certified and non-GMO!

Chocolate Chunk Coconut Banana Bread.

It has such a deliciously sweet flavor that works perfectly in this recipe. I used coconut flour in this honey nut banana bread because I find the texture helps absorb any excess moisture from the bananas and honey. Since coconut flour is so uniquely absorbent, I wouldn’t recommend subbing in any other flours in place of it – it just won’t work quite the same way!

The recipe also uses smoothalmond butter, which helps provide some structure and fat, while alsomaking the loaf super rich and flavorful. You can definitely sub in another nut butter of your choice for the almond butter, though.

While my go-to banana bread recipe offers other gluten-free options within the post (including a delicious oat flour option), the almond flour answer is not as straightforward. I think it took me seven tries to get this recipe just right!

I modified the recipe to work with almond flour, which might be helpful if it’s your preferred flour, or you happen to have a surplus in your pantry.

Gluten Free Honey Orange Ginger Blueberry Banana Bread

This banana bread is very tender, moist and decadent. These qualities are natural by-products of using almond flour and additional eggs to hold the bread together. This “bread” almost reminds me of pound cake in texture, and it could definitely pass as banana cake—perhaps you’d like to top it with cream cheese frosting.
