Not Too Sweet Banana Bread Recipe

This is a great recipe for a basic classic banana bread. I have only two criteria for what I would consider the best banana bread recipe: super moist and big banana flavor.

I’ve made this recipe a LOT. Just pay attention to a few tips that I promise will get you to a REALLY great banana bread.

There’s no need for a stand mixer. I have tried it with and without and didn’t find a difference. You can mix the batter with a spoon or fork. The instructions are simple. Just be sure to pay attention to the tips which are all included in the recipe.

For baking, the best way to measure flour is to weigh it on a kitchen scale. If you don’t have a scale, use the scoop and swipe method with measuring cups. Scoop the flour with a spoon into a measuring cup, then level it off with a knife. The right amount of flour is important for the texture of the banana bread.

Sometimes the batter will curdle when you add a cold egg. If you forget to take the egg out of the fridge ahead of time, run it under warm water for a minute. (Even if the batter curdles a bit, it still should be fine). 

Easy Moist Banana Bread Recipe

Yes, you can make muffins instead of a loaf. Increase the oven temperature to 375F/191C and bake muffins for 20-25 minutes or until the tester comes out clean. 

Don’t throw out your browning overripe bananas. Throw them into a ziploc bag (remove as much air as possible), then into the freezer for up to 3 months. Defrost them in the fridge or microwave them for 1 minute or so when you’re ready to bake a super moist banana bread.

Yes, bananas can turn dark brown or even black in the freezer – and even mushy or liquidy – but they are safe and perfect for making banana bread. To prevent the skin from turning black, you can flash-freeze the bananas first before putting them in a ziploc bag in the freezer.

This has been one of my favorite banana bread recipes since I can remember and I have to give my Grandma ALL the credit.  She literally makes the BEST and it was always a staple in her home growing up.  This banana bread is so moist and fluffy, incredibly easy to make and is the perfect way to use up those overripe bananas!  Everyone needs a staple banana bread recipe and I hope this one is yours!

Now for the disclaimer.  This is definitely not considered a healthy banana bread as it does contain butter and sugar, but SO MANY people have asked me for this recipe over the years that I wanted to share it on my blog for those who wanted to make it.  I mean hey, all things should be eaten in moderation anyway, right??  I have tried modifying this recipe several times to make it a bit healthier, but it just never comes out quite the same so I wanted you all to have the original recipe 😊

To Store: This banana bread can be stored in an airtight container or wrapped in plastic or foil at room temp for up to 3 days, but make sure to refrigerate after that to keep this longer.  This bread will last up to a week in the fridge.

Really Easy Air Fryer Banana Bread (mini Loaf!)

To Freeze: This bread freezes really well too!  You can either wrap the entire loaf in plastic wrap, aluminum foil or a freezer-safe bag or you can freeze individual slices.  When ready to serve, allow to thaw out overnight in the refrigerator and bring to room temperature before slicing.  This bread will keep in the freezer for up to 3 months.

I love to make loaves like this. They’re one of the easiest kinds of treats to bake. Just mix up the batter, pour it in a pan, and bake! Maximum impact, minimal effort.

Some of my favorite quick breads are this zucchini bread, this coconut bread, and this iced lemon loaf. But banana bread is hands-down the best of all!

Oat Flour Banana Bread

Banana bread is a simple, comforting treat, that’s perfect for breakfast or as a snack. I love to enjoy a slice with a little soft butter and a cup of coffee or tea!

It’s a quick bread, which means it has more of a moist, cake-y texture, is a little sweet, and rises with the help of baking soda.

Vegan Not Too Sweet Banana Bread

Baking from scratch might sound scary or intimidating, but I promise you, this is SO EASY. If you’ve never baked from scratch before, banana bread is a great place to start. It’s very forgiving, and bakes up moist and soft every time. You can’t go wrong with this recipe! It’s the best.

Start by placing your dry ingredients in a large bowl. Flour, sugar, baking soda, and salt can all go in together. Just give them a quick stir with a whisk to combine them.

In a separate, smaller bowl, mash the bananas. You can do this with a fork, or you can puree them in a food processor, or just use a hand mixer. It’s easiest if your bananas are very soft and ripe.

Coconut Macadamia Nut Banana Bread

To the same bowl, add the Greek yogurt (or sour cream, buttermilk, or other dairy-free option), the milk, eggs, melted butter, and vanilla extract. Whisk everything together until it’s well-blended.

Now just pour the liquid mixture into the dry, and fold gently together. You can see what “folding” looks like in the video below.

Be careful not to overmix the batter, so your banana bread comes out soft and tender. Overmixing could develop the glutens in the flour and make your banana bread dense and tough.
