I baked this Garlic Onion Paleo Bread loaf, wrapped it in foil after letting it rest a bit and transferred it to the fridge.

But this wasn’t the first time I had made this loaf of paleo bread. A week prior to leaving, I was looking for some bread to serve with an egg salad I had prepared and that’s when I first whipped together this loaf recipe.

I originally baked that loaf in a glass baking dish and it came out soft and fluffy as you can see below.

This time I decided to increase the serving size. But, that’s when ratios and baking mumbo-jumbo tends to get involved and so my end result was not as good as the first batch (it was more crumbly and dry) but everyone still loved the flavor.

So I attempted to make the loaf a third time, because I wanted to nail it down and share the recipe with y’all. However, the third time around I made this loaf using my mini metal baking dish. That means I had made the “same loaf” three different times, three different ways! Gah!

On top of changing the ingredients and the pans used, the third time I made this paleo bread loaf I didn’t get to try it until the next day when it was already cold. That means I couldn’t really compare the flavor to the previous batches.

Well, I guess you have some options! No matter which type of bread pan you own, you can use whatever you’ve got. :)

I can tell you that the flavor is great! That may have been the only constant throughout all three of my trials.

There is so much to tell y’all, I don’t know where to start. As we round the corner into the holiday season, life picks up pace, as I’m sure you can relate. We had two birthdays in our house last week, we continue to homeschool (hopefully not too much longer), and my little passion project, Legit Bread Company, just released our holiday mixes!

Gluten Free Green Bean Casserole (with Homemade Fried Onions & No Canned Soup!)

This year was a dream in the making. When we were living in Illinois and I was in a really bad place mentally and physically while living in mold, I had the idea to collaborate with other community members and bring their best recipes to market. I had told my manufacturer about this idea and really hoped I’d be able to see it to fruition. Finally this year, I was able to – with better health and a clear vision, it was time!

I first teamed up with Amanda from The Curious Coconut and Alaena from Grazed and Enthused. They brought their Dairy Free Cheese Mix and Allergen Friendly Cookie Mix, respectively, to the Legit Bread family. They’ve been a huge success and it’s been so fun collaborating with others to have even more delicious mixes in the line up.

I love making this bread recipe from time to time because its texture is very similar to real bread, especially the darker German and Austrian types of bread. In fact, I first made this recipe while travelling through Austria. We rented an Airbnb with an oven and I wanted to make a few things that we could bring on hikes with us.

Low Carb Coconut Flour Bread (gluten Free, Dairy Free)

I didn’t have a baking tin but decided to shape the bread loaf by hand and simply bake it on a flat oven sheet with some parchment paper underneath. It worked out perfectly and everyone enjoyed a slice or two with avocado and ham.

Ingredient

I wanted to add some savoury flavours to the bread so I used some onion and garlic powders, and some dried herbs. Therefore, this bread is best paired with non-sweet foods and toppings. You could easily make this same bread without those seasonings if you want to use it for toppings like nut butter and honey, but I prefer to avoid the sweet stuff, so I deliberately make it that way.

Once the loaf is baked, I allow it cool completely, then slice a few slices for the freezer (in Ziplock bag) and enjoy the rest over the next few days. Paleo Naan Or Onion Kulcha Bread

You can find most of the ingredients in health food stores and online these days. Almond meal can be replaced with other nut meals, linseed meal with flaxseed meal, and cassava flour with tapioca flour (although I think cassava flour has a slightly better, denser texture compared to the more fine, starch-like tapioca or arrowroot). Buckwheat or quinoa flour can be used in place of cassava if you tolerate those non-wheat flours.

This super easy savoury paleo bread loaf can be baked with no tin. It lasts well and freezes beauifully so you don’t have to eat it all at once.
