Eggs with toast is one of the quickest meals one can make since it contains only two ingredients: toasted bread and eggs (cooked any way you like it!). But with this recipe, we’re looking at a) cutting down on cooking time and b) adding a better method to get your egg toast fix!

Toasting your bread, save up on time by making a savoury French toast. You start the recipe as you would for a spicy, Indian-style omelette – egg, green chillis, seasonings of your choice and finely chopped onions, tomatoes and coriander. Add them to a flat bowl so that you can easily dip your bread into the mixture, later.

You then add some milk to your egg mixture and whisk well. The milk helps to add moisture to the dish – but don’t add too much. Anywhere from 2 tablespoons to 1/4th cup of milk should do, any more milk will make the French toast soggy. Since this recipe is only for two slices of bread, we’ve stuck to using two tablespoons of milk.

Then comes the bread. Got bread that is just about to go stale? Use them for this savoury French toast. Wheat/brown bread work as well, since the slices are more sturdy.

Lay the slices of bread onto the egg mixture and allow the mixture to coat the slices, 5 seconds on each side. Then heat a pan and place the coated slices of bread and cook on one side for 1 minute. Flip and then pour over the leftover egg mixture onto the pan, over the bread and cook until the toast is lightly browned. Top off with some freshly chopped coriander and you’re good to go!

You can also add on some extras to the savoury French toast. Our favourite is to top the toast off with some shredded cheese and chopped Pepper Chicken Salami, while the dish is still warm – makes it brunch-worthy!
