As with its quick bread cousins, Snickerdoodle Bread is gratifyingly straightforward, requires no additional steps like chilling the dough, freezes like a dream (if any leftovers make it that far), and is easy to tweak to make healthy too.

For example, this is a Snickerdoodle Bread with Greek yogurt and whole wheat flour, two healthy ingredients whose presence will surprise you once you see how sweet and decadent it tastes.

In other words, this bread is pure heaven. The dough (which I based off of my Greek yogurt Strawberry Bread ) is mild and buttery, making it an ideal vehicle for a heap of cinnamon flavor.

If you prefer to make the Snickerdoodle Bread without cinnamon chips, you can up the amount of cinnamon in the batter and either omit the chips entirely or swap them for a different kind. Butterscotch chips, I suspect, would be particularly delicious.

When you sprinkle on the cinnamon-sugar topping, it will feel like a ridiculous amount. Use it all. We are baking a bread modeled off of a cookie. This is neither the time nor place for moderation.

For holiday gifting (or better portion control), a snickerdoodle mini loaf makes a lovely homemade present. One batch of Snickerdoodle Bread should yield about 3 mini loaves, depending upon the size of your pan. I like this set , because it’s easy to clean and the loaves never stick.

A note on Amish snickerdoodle bread: A friend of mine tried one of the rare slices of this bread that I didn’t immediately demolish and commented that it tasted like the Amish friendship bread her mother used to bake.

Comes from. It’s kind of a funny word. When a person snickers, it’s a sort of a suppressed laugh, and doodle is what you do when you’re bored. What’s that got to do with cookies?!

According to Wikipedia, snickerdoodles likely have a German origin. The etymology of snickerdoodle is uncertain although it may come from the German “schneckennudle” or cinnamon roll. Literally translated, it means snail noodle which sounds sort of gross and doesn’t really have anything to do with these cookies. At least I hope not.

Snickerdoodle Banana Bread Recipe

Sorry about that segue into word land. I know what you really want to hear is how to make this really delicious cinnamon bread.

Besides lots of cinnamon, snickerdoodles are known for having a slightly bitter tang coming from the addition of cream of tartar. You’ll find cream of tartar, an acidic white powder, in the spices section of the grocery store. The tangy flavor is enhanced with buttermilk in snickerdoodle bread.

Put a layer of batter in the loaf pan, sprinkle it with cinnamon sugar, and repeat three more times, ending with cinnamon sugar.

One other note: Line your loaf pan with parchment paper, making “wings” on each side to lift the bread out. The bread tends to stick in the pan otherwise because the cinnamon sugar layers caramelize a bit on the edges. Parchment paper solves that little problem.

Room Temperature/Refrigerate: Cool bread completely before wrapping well. Bread can be stored at room temperature for two to three days or in the fridge for up to a week.

Freeze: The bread freezes well, too. Wrap and label it to freeze for up to 3 months. If desired, slice the bread before freezing and wrap individually so you can enjoy a slice whenever you like, or pop one into a lunchbox.

STEP EIGHT: Repeat the layering until the last ⅓ of the batter has been spooned in. Evenly sprinkle the remaining cinnamon sugar mixture on top of the bread batter.

STEP NINE: Bake in the preheated oven for 50 to 55 minutes, until a toothpick inserted in the center of the loaf comes away clean.

STEP TEN: Allow the Snickerdoodle bread to cool slightly before removing it from the loaf pan and transferring it to a cooling wire rack to cool completely.

When inverting the bread from the pan, I recommend doing it over a paper towel so the cinnamon-sugar doesn’t make a mess.
