This honey nut zucchini bread is made with honey, sugar, and pure vanilla. It’s loaded with chopped walnuts and is the best way to use up your summer garden’s zucchini.

This is the best zucchini bread recipe I’ve made to date. It is the perfect way to use up an overabundance of zucchini from the garden.

The bread recipe is loaded with walnuts and sweetened with sugar and honey. It actually reminds me a little of banana bread. Fans of my chocolate chip banana bread muffins, might want to make this recipe a little sweeter by adding chocolate chips to it too.

Shredding zucchini:Shred the zucchini with a box grater. This will yield the best results. Don’t shred it too far in advance or the water will start to drain from the grated zucchini. Zucchini Bread Recipe With Salted Honey Butter

While we don’t have zucchini in our small garden, I know that many of you do. There is always the question about how to use this veggie in various recipes. Should we grill them, use them in turkey zucchini meatballs, or use them in baking?

While I love my mom’s Chocolate Zucchini Muffinrecipe and my Chocolate Chip Zucchini Muffins, I really love this one too! It’s a little bit different and has the BEST taste.

Make batter. Combine the wet ingredients – the eggs, olive oil, brown sugar, honey, vanilla, and shredded zucchini. Then add the dry ingredients – the flour, salt, baking soda, baking powder, and cinnamon. Stir until just combined.

Cool. Let the bread sit in the pan for about 5-10 minutes, and then remove to a cooling rack. Slice and ENJOY!

No, the shredded zucchini should NOT be dried for this recipe. The moisture helps make this bread super moist. When I bake with zucchini, I don’t dry it. When I cook with it, I occasionally do.

There are two things I usually do to determine if the bread is done. One, I push down slightly in the center of the loaf, and if it’s jiggly, I bake it longer. And two, I use a toothpick and insert it in the loaf (a couple of different places) to see if it comes out clean. If it’s wet, then leave the bread in for longer. Just be careful to avoid over-baking.

This bread was a lifesaver with my picky little eater. It was one of about four things that he would actually eat when he was younger. And although I have tried a variety of other zucchini bread recipes, we have always come back to this one. It is moist and flavorful, and oh so good!

The original recipe calls for sugar, but I have found that using honey lightens the bread up a bit and makes it that much healthier. I also like to substitute in some wheat flour for white, and substituting some applesauce for the oil is also an option. I have found that the applesauce doesn’t make it quite as moist though, but feel free to adjust it to your liking! Enjoy!
