Moist Banana Pound Cake Recipe

This banana bread is a great make ahead recipe for your next brunch. The whole house will smell like a bakery and you and your family will be able to enjoy a moist and delicious banana bread!

Left Over Trick: try toasting a slice of left over banana bread the next day, spread a little jam or butter on top for a delicious treat!

2 Butter a full size Bundt pan (12 cup). Slice a 1″ cube of unsalted butter and use your hands to rub the butter along the whole interior of the Bundt pan being sure to coat thoroughly.

4 Using a stand mixer or a hand mixer in a large bowl, beat the butter until light and creamy. Add the sugar and beat until light and fluffy.

5 Add the eggs one at a time. Mix for about 30 seconds after each egg is added, or until evenly combined.

9 Bake for approximately 60-75 minutes. Checking every 5 minutes after 60 minutes of cooking, pierce a toothpick into the center of the bread. If there are little to no crumbs or batter on the toothpick and the bread does not jiggle in the center, it is done.

10 Remove the pan from the oven and place on a cooling rack for 10 minutes to cool. Once cooled shake the pan a few times to loosen the bread. Place a plate or cooling rack on top of the pan to cover the bread. Carefully flip and remove the pan. Cool another 10 minutes before slicing.

That's when I discovered the recipe for Banana Bread in my Better Homes & Gardens cookbook and started making it for him using those brown bananas. At some point in those early years is when I also learned I could freeze overripe bananas and save them up until I had enough to bake.

Soooo.... to this day, I toss my brown ripe bananas in the freezer and save them up until I have enough to make banana bread. Recently my stash of frozen brown bananas had gotten out of hand and I had enough bananas to bake 6 pans - including my bundt pan (when I ran out of loaf pans).🍞

Anywho - I thought I'd share the recipe that I use and how I sometimes bake it in a bundt pan. I don't know why having a hole in the center of the cake makes it so much better, but it does!

Really I'm not sure where cake recipes end and bread recipes begin. This could easily be considered a bread or a cake in my opinion. Today it's Banana Bread in a bundt cake pan... so call it what you want😉

Yes, you can bake this recipe in a 9-inch loaf pan, just be careful to not overfill it. Leave at least half an inch at the top of the pan for the cake to rise without overflowing. If you're concerned, put a baking sheet underneath it in the oven to save yourself from a nasty mess.

While many banana bread and/or bundt cake recipes have sour cream, plain yogurt or greek yogurt in them for added moisture, those ingredients aren't necessary here. The bananas and oil take care of that so you have a truly dairy-free cake that is delicious and not even remotely dry!

Fabulous Bundt Pan Banana Bread Recipe

This Bundt Cake Banana Bread is soft and flavorful - made with overripe bananas, it's a simple, classic recipe that's easy and delicious!

Pour the wet mixture all at once into the dry ingredients. Stir the flour mixture just until moistened (batter should be lumpy), scrape down the sides as needed.  Fold in nuts, if applicable.

Bake for 55 to 60 minutes or until a wooden toothpick inserted near center comes out clean (if necessary, cover loosely with foil the last 15 minutes of baking to prevent overbrowning).

I’ve made this recipe once with average-sized bananas and a second time with large ones and both times the bread came out fabulous. The only difference is that the larger the bananas are, the longer you have to bake the bread and the moister it is as well.
