Eggless Panettone Bread Recipe

This eggless version was highly requested from my followers who can't have eggs because I previously shared the classic egg Panettone recipe.

Both of my Panettone recipes are beyond easy to make! Usually traditional Italian Panettone is very long and difficult to prepare: you could need many days since it's made with sour dough and not with yeast and you usually need a professional stand mixer; but with this recipe you'll get a delicious Panettone with the classic original flavor without effort!

Sourdough

I have substituted egg yolks with a mix made with milk and turmeric powder, but don't worry, you won't taste turmeric, I used it just for the yellow color, since Panettone is slightly yellow thanks to the yolks.

Chocolate Orange Panettone

It tastes like the traditional Panettone, even witout eggs! The texture is slightly different because I made it without stand mixer or kneading by hands so everyone can easily make it at home!

I am an Italian girl in love with baking and cooking. I’ve been raised in a cooking family, baking since I was a little girl and learning from my mom and my professional chef grandma.

When my followers asked for eggless Panettone, I thought it was almost impossible. I already have planned a super easy recipe instead the traditional Panettone recipe, I didn’t use stand mixer, I used the yeast instead sour dough, the rising time was short…could I have skipped the eggs too?

Amazing Vegan Panettone Recipe

I was pretty surprised when i made the first attempt: the dough tasted so close to the classic one (except for the texture, but this is not because the egg lacks but because of the simplified method I used for making the dough)!

So I decided to use Turmeric powder because I’ve already used it before for my eggless recipes and I was very satisfied with the results, that’s why I added this beautiful golden powder: to look my Eggless Panettone like the regular one without changing the taste.  

Depending on the flour you’re going to use, you may need more or less flour, for this reason consider that you should get a soft and sticky dough or your Panettone will turn out dry.

Easy Italian Christmas Cake: Fluffy Panettone Recipe

Watch my recipe video to see the consistency of the dough: if yours turns out too wet, add a bit more of flour (be careful to not add too much!), if it turns out too dry, add more water.

I didn’t use a stand mixer for this recipe, neither I kneaded the dough by hands (it would be too sticky to touch it), so I mix it in the bowl for few minutes using my spatula, just until it became less sticky.

If you have a stand mixer, feel free to use it, it could be helpful. You can knead it for about 15 minutes or until it becomes smooth.

Sourdough Vegan Panettone

In the recipe video I show you how to easily make your own Mini Panettone paper molds, it’s pretty easy and funny too! You can use this technique for muffin molds too.

I started from a 15x15cm-6x6inch parchment paper squares, I folded in half, then in half again, then I shaped and folded it using an upside glass. That’s it!

With this recipe you’ll get about a 1kg Panettone, so you can use a huge 1kg mold (follow the instructions for my egg Panettone recipe to place it upside down to cool down), or you can use 9 mini Panettone molds (100 g each one).Sorry for being so bad at updating the recipes lately, as I wasn’t allowed to bake or cook that much since my surgery. But the good news is, I’m 90% recovered and have been incorporated some light exercise back to my daily routine, such as swimming, yoga and pilates. Weight lifting or high impact workouts (i.e. HIIT) are totally off limit.

Easy Homemade Panettone Recipe (20 Minutes)

Oh! And I just came back from a trip to Tokyo and I have been sharing all the amazing vegan foods I found on my Instagram (ICYMI). Panettone Recipe (italian Christmas Bread Recipe)

Almost 4 months ago, I posted this sneak peek video on Instagram teasing about the SOURDOUGH VEGAN PANETTONE recipe that I finally nailed! I started experimenting it last year and failed so many times that I really didn’t bother to try again this year. But then I decided to give it one last try and boom! The most gorgeous and beautiful vegan panettone was born! First, I want to apologize for not posting earlier as promised. But now I’m here, so be prepared and get ready for a long and detailed post on how to make the best vegan panettone you’ll ever taste.

If you have read any other sourdough panettone recipes before, you may already know that Lievito Madre (aka mother dough) is the make-or-break element of the recipe. It doesn’t matter if you use ingredients of the highest quality or you have the perfect temperature of making panettone (it’s 28°C or 82.4°F by the way). You will not get the tallest and fluffiest panettone unless you have an active and ready to go Lievito madre and use it at its peak.

EGGLESS

Being a highly enriched dough, your starter has to be extra strong to be able to strengthen the dough and give it a rise. Lievito madre is a stiff sourdough starter that is often used in Italy. It is not only active in nature, but it also has a very mild flavour profile without any sourness. All these make it very suitable to leaven enriched dough with high fat and sugar content, especially panettone and brioche.

Bread Machine Panettone Recipe

Making Lievito Madre from scratch is itself a complicated process which deserve an entire new post for that, so I won’t be going through all that here. But Bake Street has a very detailed post with videos you can take a look if you are interested in making one. The easiest and most direct way, however, is to buy or ask if you can get some from someone else on Facebook group of some local home bakers or even ask a local bakery. That way, all you need to think about is how to maintain it.

After reading this article, if you are feeling intimidated and doubtful of whether you can do this or not. Just try it! You may fail for the first couple of times, or you may not. Easy Homemade Italian Christmas Bread Panettone Recipe

A Panettone is a classic Italian sweet bread, often enjoyed around Christmas time or the New Year. This bread is tall and usually weighs around 1kg!

A traditional panettone usually is filled with candied oranges, lemon or orange zest, and raisins. It’s often topped with icing sugar making it a classic Italian Christmas cake.

After much testing and a few tweaks to my brioche recipe, this vegan sweet bread is ready to share with you all! This recipe has a higher hydration dough, meaning the dough is very soft and doesn’t hold its shape. This helps create the soft fluffy texture we’re going for.

Vegan Panettone Recipe

The key to this recipe is to be conservative with how much flour you add when kneading. The more flour added, the less soft the dough will be.

Dairy free butter, oat milk, and JUST Egg help create the perfect enriched dough. I’ve tested a few substitutions as well. Dairy free plain yogurt can be subbed in for the JUST Egg since I know it can be hard to find. Keep reading to see more about what’s inside!
