Hemp Bread Recipe Vegan

METHOD: For the vegan butter, blitz all the ingredients together in a high-speed blender until smooth and creamy. Pour into a suitable container, seal with a lid and refrigerate for 3–4 hours, or until set. Store in the fridge for up to 2 weeks.

To make the homemade vegemite, put all the ingredients in a food processor or high-speed blender and blitz until well combined. Transfer to an airtight container and store in the fridge for up to 4 weeks.

Savoury

Combine the almond meal, buckwheat flour, psyllium, chia, hemp, bicarb and salt in a large bowl. Stir well to make sure there are no lumps in the mix and everything is evenly distributed.

Pour the wet mix into the dry mix and combine thoroughly. Cover with a tea towel and leave to sit in the bowl at room temperature for about 1 hour.

Once your ‘dough’ is feeling sticky and has absorbed any excess water, scoop it into your prepared loaf tin and smooth the top out evenly. (I like to give it a gentle bang down onto a chopping board on the bench to even things out and remove any air bubbles.) Bake for 1 hour, or until the loaf is dark brown and firm to touch. Remove from the oven and leave to cool slightly, then turn out onto a wire rack and leave to cool completely.

Once cooled, slice the loaf up (so it’s ready for toasting and spreading with the vegan butter) and keep in the fridge for up to 1 week or in the freezer for up to 3 months.

To serve, toast the savoury hemp bread slices, then spread generously with the vegan butter followed by a thick layer of homemade vegemite. Perfection.

For a long while, I was obsessed with a seed and nut oat bread that was fully vegan and gluten-free, from a certain brand. I have not tried this without the nuts, but I assume you can swap the nuts by weight for the same weight of seeds like sunflower and pumpkin seeds.

I do agree that this bread is more expensive than making a sandwich loaf, and that’s because we don’t use flour but nuts and seeds, which are expensive in themselves. I have costed this up, and using the ingredients I have at home, this loaf cost my £5.89 for just over 1kg of bread, whereas the loaf I previously had was £9.50 for a 950g loaf.

This recipe begins by combining the yeast with the whole psyllium husk and water to create a gel. You can do this first step in a large bowl or a separate bowl, then add it to the dry ingredients.

The beauty of this tasty GF vegan bread recipe is that you can also bake it in a bread machine. In the warmer summer months, you should try it! Using a bread machine is super easy. Plus, you won’t unnecessarily make your house even hotter by turning on your oven.

You can visit the original Bread Machine Loaf post for the instructions to bake it in your bread machine. I suggest that you mix everything by hand first and then only use your bread machine for baking the loaf.

Bread machines often have a gluten-free setting, but they don’t include details for recipes that are also egg-free. For that reason, the gluten-free setting on your machine may or may not be ideal for this recipe.

I’ve tested various settings on mine. The best loaves are often the ones that I mix by hand first, then only use my bread machine for baking the dough.

Ingredient 100% Oat Flour Bread (v, Gf, No Oil)

The crust will be softer if baked in a bread machine as opposed to the oven-baked version. The final loaf’s overall colour will also be different, but it will be equally impressive and delicious!

If you try the bread machine version, remember to take it out of the pan as soon as possible to let it cool on a wire rack. Leaving it in the bread pan will make it sweat, and then it will get soggy.
