For most apple recipes it is the best to use firmer apples. The best baking apples keep their structure without turning into mush.

Cinnamon

Granny Smith is my go-to baking apples. They are crisp and quite sour but there are a few others that hold up under heat.

Cinnamon Apple Bread Recipe

Grease 9 x 5-inch loaf pan with baking spray, line with parchment paper leaving large overhang the sides so you could easily lift the bread from the pan. Adjust the oven rack just below the center (to the lower third position) and preheat the oven to 350 F.

Beat room temperature butter with sugar and vanilla extract. Add eggs and mix to combine. Add mixture of dry ingredients (flour, salt and baking powder) and mix to combine. Slowly pour in milk and mix just to combine. Scrape down the bowl with rubber spatula to make sure there’s no lumps remain.

Spread half of the batter in prepared pan, scatter half of the apple mixture and sprinkle with one half of cinnamon sugar mixture. Spoon remaining batter and gently smooth the top. Scatter remaining apples and sprinkle with cinnamon-sugar mixture.

Cinnamon Sugar Swirled Apple Butter Bread.

Bake in preheated oven about 55-70 minutes, or until the toothpick inserted in the center comes out clean. This is a heavy loaf full of apples, so if your bread takes longer, that’s OK. Just tent it with aluminium foil after 30-40 minutes to prevent the top from browning too much.

Remove from the oven and cool 20-30 minutes in the pan set on a cooling rack. Then using the paper overhangs lift the bread from the pan.

Cozy Apple Cinnamon Bread

Apple — make sure you use a firm, crisp apple such as granny smith or honey crisp to ensure the apples do not have a mealy texture. You can use sweet apples or tart apples based on your preference. I like shredding the apple as it infuses the apple flavor throughout the bread. You can dice the apple if you do not have a box grater.

Sugar — while in a pinch, you can use just white sugar or brown sugar. However, you should use both sugars for the best texture, moistness, and flavor.

Cinnamon

Leavening agents — to help lift the bread, this recipe requires both baking soda and baking powder. Double-check the expiry date of your leavening agents, as your bread will not rise without it.

8. Sprinkle with additional granulated sugar if desired. Bake for 55 to 65 minutes, then let cool in the pan on a wire rack for 10 minutes. Remove from pan and let cool for about 30 minutes more.

You can freeze the entire loaf or slices of bread wrapped in plastic in a freezer-safe container for up to 3 months.

Make sure you use apples that won’t turn soft and mushy when baked. I think the best apples apples for baking are Honeycrisp, Galas, Fuji, and Pink Lady.

How long will the Apple Bread stay fresh? To prevent your apple cinnamon bread from getting dry, should be stored at room temperature in an airtight container, wrapped in plastic or in a large, resealable bag for up to 5 days.

Can Apple Cinnamon Bread be frozen? Yes! Let the bread cool completely and then wrap the bread (in slices or as a whole loaf) in two layers of plastic wrap followed by a layer of aluminum foil. Place in a freezer ziploc bag and freeze for up to 2 months. Bread should be thawed at room temperature. Simply unwrap the number of slices or whole loaf and let come to room temperature. Enjoy!
