Because it’s the first week of December, I’m dedicating the next few posts while we’re gone to some yummy seasonal recipes. It’s Christmas time!! To be completely honest, the first time I made this, it totally crashed and burned. It was aw-ful. And yet, Cam still ate it. And liked it. He raved about it. Haha, he loves me!
I learned my lessons and now it’s delicious. Oozing with honey and cinnamon & sugar, hot out of the oven. It’s absolutely wonderful with a glass of milk or cup of coffee.

I started with my basic bread recipe that I use for focaccia and added a few more simple ingredients. Dissolve the yeast packet in 1/4 C warm water. The temperature should be about 100-110 degrees. Pour in a tablespoon or two of sugar to help it activate. Let stand for about 10 minutes or until the yeast doubles. You’ll know that it has when there is a volume of foam on the top of the water. In a medium mixing bowl, combine flour, sugar, salt, and extracts with a fork. Mix well. Mix in the egg. Add in the yeast water with a fork until all of the flour has been absorbed into a sticky ball. Add in about 1/4 C more water, mixing with the fork. You may need to add more if the flour isn’t completely incorporated yet into the dough. Add a tablespoon at a time, stirring after each addition, until you don’t need anymore. On a lightly floured surface, and your hands floured as well, knead the dough for about 5 minutes until it’s in the form of a sticky ball. There are a lot of tutorials for kneading on youtube, but as long as you are vigorously pushing the dough with the palm of your hand and folding and turning it each time, it should knead. This is an important step; it’s what incorporates the yeast into the whole dough. Set the ball of kneaded dough in a bowl rubbed in olive oil and let stand for about an hour.
Easter Bread With Cream Cheese Filling
Preheat the oven to 350. Roll out the dough to about 1/4 – 1/2 inch thick and smear honey and then the cinnamon sugar mixture all over it. Please feel free to add more than I did! Roll it up like a burrito and then slice it down the middle with a knife. Now you have two long doughs. With the cut side with layers facing up, twist the two doughs together to form one twist, and then bring the ends together to form a wreath. Carefully transfer the bread wreath to a parchment paper lined baking sheet or well oiled baking sheet. Bake for about twenty minutes — but be sure to keep an eye on it so it doesn’t brown too much. Every oven cooks differently. I have to watch mine very carefully. If you have a serious sweet tooth like me, drizzle more honey on the top while it’s hot out of the oven and sprinkle on more sugar! This loaf of braided bread will stay fresh for 3-4 days as long it is wrapped tightly in plastic wrap once the bread has fully cooled. Do not refrigerate.

Zopf / Butterzopf (swiss Braided Bread)
You can mix the dough in a standing mixer using a dough hook or by hand. It’s very easy to do either way.
This honey wheat bread recipe involves two rises. First the dough rises in the bowl and the second time around it rises in the loaf pan. Have patience and don’t rush to the next step before the loaf has properly risen, or you may end up with a dense, short loaf of bread that is yummy but not really what we’re going for in this recipe!
To speed up the rising process, cover the dough with a moist cloth and put it in the bowl/pan in the oven (while it’s off). Then place two cups of boiling water in an open container near the dough in the oven and turn the lights on. The warm damp environment will make the dough rise much faster! Just be sure to remove it before you preheat the oven!
Tahini Honey Challah!
After you remove the honey wheat bread from the pan, transfer it to a cooling rack and cover it with a towel. This will keep the bread warmer for longer, and it will also help the crust stay nice and soft!
Store leftovers in an airtight container at room temperature for up to 3 days, in the refrigerator for up to 1 week or in the freezer for up to 2 months.

This bread freezes and reheats beautifully! I often make two loves, one for now and one to freeze for later. Be sure to slice the bread before freezing it! This way, you can pull out the number of slices you need for a given meal instead of the entire loaf

Store this homemade whole wheat bread in an airtight container or plastic bag. If you will eat it within one day, keep it at room temperature to avoid drying out. If you will take longer to finish a loaf I recommend storing it in the refrigerator.
