Irish potato bread most likely isn’t the typical type of potato bread you’re thinking of, it’s a delicious potato pancake that’s popular in Ireland and Northern Ireland. Delicious for breakfast or any other meal of the day!
If you’ve never had Scottish potato scones, or Irish potato bread, you are truly missing out! They’re essentially the same, but have different names in different locations. Even within Ireland, some call them potato bread and others call them potato cakes or farls.
Regardless of what they are called, this iconic Irish food is so incredibly tasty, especially when fried in the same pan where your bacon was just fried! Oh yes, it’s the thing to do!
Potato Bread Recipe
Yes, leftover mashed potatoes are great for making Irish potato bread! This is probably how this recipe originated, to be honest. Although there’s normally milk in mashed potatoes, it doesn’t matter, you can just add more flour to get a non-sticky consistency.

Use a potato ricer to rice the potatoes, if you have one. If not, just mash them, but your potato bread will come out better if you use a ricer.
Irish Potato Bread Recipe
Gently fold over until smooth. Divide into two equal portions and form each into a ball. Roll one ball out to about 1/3″ thick, then cut into quarters with a large knife or cake lifter. Repeat with the second measure of dough.
Heat a pan or griddle to medium to medium high. When hot, begin cooking the Irish potato bread (do not use oil or butter.) When brown on both sides, place on a clean tea towel and cover.
These are fully cooked and may be eaten as is, but traditionally, they are fried in the same pan as the bacon was fried in. Decadently delicious is all I can say! How can you not love Irish food?

But I think that potato cakes are so good, and relatively quick anyway, it’s worth cooking up a batch of potatoes specially for them.

I use 350 grams of mashed potato to make eight farls. So, if you’re starting off with raw, unpeeled potato, you’ll need 380-400 grams. As with any mash,
I’m sure you know how to boil, drain and mash potatoes. But, just in case, I’ve included full instructions in the recipe card at the end of the post 😁.
The main point to note is that the potatoes should be as dry as possible before mashing. I do this, after draining, by leaving the cooked potatoes in the sieve or colander for five minutes. This allows any clinging water to evaporate.

All you do then is add some pepper (I prefer white pepper here), a bit more salt if needed, and mash with butter. If you’re using cold cooked potatoes then melt the butter first so you can incorporate it better.
Next, stir in the flour to create a soft dough. For 350 grams of mashed potato I use 50 grams of plain flour.
The potato cakes are cooked in an ungreased, non-stick frying pan or on a griddle. Some people fry them in fat, but I think that’s unnecessary. I cook mine on an electric table top grill.

I became a huge fan of these when I started using one for Sourdough Pancakes . As well as cooking very evenly and having good temperature control, the good size means I can cook eight farls in one go.
If your pan or griddle isn’t big enough to do this, then cook the potato cakes in batches. Keep cooked ones warm in a low oven while you finish the rest.
They’ll only need 3 to 5 minutes per side, on medium heat, to become cooked through and browned. The farls will also puff up a bit when done.

Although I haven’t tried it yet, I imagine smoked salmon and soured cream on farls would be great for a special occasion breakfast. Think of it as an easier blini!
Don’t worry that you’ll notice the pepper in the dough. I can confirm that once your sweet topping is on (like my homemade strawberry jam above) they’re good enough to eat as a dessert.

I learnt how to make potato bread from my late Irish mother-in-law. It has been a staple in our household for over three decades. I warn you, once you start making this simple bread you will be hooked.
Traditional Irish Potato Farls
Not a light and fluffy loaf of bread, they are flat and fried. More like potato pancakes or pan-fried flatbread. They are addictive and delicious. When I make a batch, they disappear a little too quickly.
You will see below that I use what I have on hand to make this recipe. It isn't a fussy recipe, or hard to make, and there is wiggle room regarding recipe execution.
The great thing about this recipe is you can jazz it up a little if you want. Change the shape, thickness, even add some extra ingredients.
Traditional Potato Bread
You can see from the photos that I make my Irish potato bread on the thin side. Of course you can make it thicker if you desire. Half a centimeter or just under a quarter of an inch is my optimal thickness as an accompaniment to a breakfast fry up. At that thickness, they will mop up runny egg yolks magically.
Instead of rolling out balls and cutting them into quarters save time and roll out two larger oblongs of dough. Then cut into desired-sized squarish pieces. Or get the kids involved and use cookie cutters and cut out fun shapes.
I tend to not jazz my Irish potato bread up too much. Simply as I like the taste as they are. Saying that, the dough is a great base recipe to jazz up with some flavour tweaks.
