In a time when many of us are isolated at home, the kitchen has become more of haven. A safe place of comfort, sustenance and, quite frankly, pleasure as we experiment with the ingredients we have on hand. For me and my family, baking has become an integral part of each day. A rye sourdough starter bubbles in the corner and we throw together loaves of bread in the same way the generations before us would – with whatever we can access and with our intuition. The scale is hardly used, which for someone who relies heavily on measurements, is incredibly freeing and exhilarating. Baking is something we’re doing for ourselves and it’s invigorating.

Or stone age bread – referring to the paleo diet that inspired it’s creation in Denmark as an alternative to the traditional rye bread. It’s made without any flour and yeast and is held together with eggs. It’s one of those breads that’s nutritious, delicious, and comes together in no time at all. It reminds me a little of knekkebrød, a flat crisp bread that is often made with nuts and seeds and is used in place of bread. In a time when flour might be scarce for some, this is a great alternative.

I was inspired to share this bread after speaking with my mother and others who are having a hard time accessing flour right now. The wonderful thing about nut and seed bread is that it doesn’t require any flour at all. It’s also quite forgiving and flexible in regard to the ingredients. You can swap out the almonds and hazelnuts for other nuts of preference. You can add in dried fruits, coconut, chocolate, and other mix-ins you want to use. For a savory loaf, omit the dried fruit and add in herbs and spices. If you don’t have any oats on hand, you can omit them as well and use one less egg.

Multigrain Bread Recipe (bread With Seeds)

Serve this sliced thinly with the toppings of your choice. As the recipe is, I enjoy serving it with sharp cheeses, honey, cured meats, nut butters, jams, and slices of fruit. For a savory version, with the dried fruits omitted, I like to top it with things like smoked salmon, hard boiled eggs, raw vegetables, a variety of cheeses, sliced meats and a good smear of butter. Let your ingredients and palette guide you.

Preheat the oven to 350 F / 180 C. Line a large loaf/bread pan (I used a 28 x 13 cm/ 11” x 5”) with parchment paper.

In a large bowl, combine all the nuts, seeds, oats, dried fruit, if using, and salt. Add the oil and eggs and mix thoroughly until you get a somewhat wet batter. Pour into the prepared loaf pan and bake for 1 hour, until golden brown on top and set. Let the bread cool completely, about 1 hour, before slicing.

To serve, slice thinly and top with your favorite toppings. Store in the refrigerator or an airtight container for 1 week or freeze and save for later.

I'm cheap. We also don't eat that much. While I'm all about finding keto bread that tastes delicious (and let's be honest many of them do not taste delicious), I was not about to risk that many nuts over something I wasn't sure would work to make a huge hunk of something we might have hated.

So I decided to tweak a little, make a smaller batch, and see what the fuss was all about. Well, I tell you what. It's worth every penny for those nuts and seeds.

Paleo Nut And Seed Bread ; Vegan And Gluten Free

I love bread, but let’s be honest, sometimes bread doesn’t love me back. Gluten can be harsh on my digestive system, and I know I’m not alone in that. According to Cleveland Clinic, approximately 6-7% of Americans are diagnosed as gluten-intolerant, and the numbers are steadily rising.

Now, I could get into why that is (the rise of GMOs, etc.) but that’s beyond the point of this post. Instead, I want to focus on the fact that this delicious bread is not only tasty, but gluten-free and paleo friendly. Plus, it’s full of fiber, and protein from the nuts, so you can feel good while eating it, too. It’s the complete package!

Nut

Before we jump into the recipe, let’s chat about paleo. Now, if you’ve followed me for a while, then you probably know that I don’t personally ascribe to any one diet. I am a firm believer in eating intuitively, which means eating without restrictions (aside from allergies, of course). For me, that means eating a whole-foods, plant-rich diet, with organic meats, grass-fed butter, and minimal gluten and dairy (for the sake of my digestion).

Because of this, I love creating recipes that align with the Paleo lifestyle, because they’re naturally gluten and dairy free! The paleo lifestyle focuses on a rich diet of “real” foods, and focuses on eliminating grains, legumes, dairy, processed foods, seed oils, and sugar! Basically, all of the foods that, in excess, can do more harm than good.

A big thing for me is not demonizing any food, so while paleo may seem restrictive, keep in mind that we aren’t saying these foods are awful and should never be consumed. Rather, it’s more of a guideline of what should be and shouldn’t be eaten – **MOST** of the time!

I recommend pre-slicing your bread ahead of time, so you always have sliced bread ready for your toaster! If storing in a ziplock bag or airtight container on the counter, this bread will stay good for about 3-5 days.

Seed + Nut + Fruit Bread: Simple + Pretty + Gf

Finally, the storage method that I personally recommend is freezing it. When frozen, bread retains its moisture and keeps fresh for way longer! This bread stays good in the freezer for several months, so if you’re looking to stock your freezer and prep, this is a great recipe to make!
