No Knead Whole Wheat Bread
It’s called Irish Soda Bread because it’s made with baking soda instead of yeast. Because of this, it’smore dense than your everyday white sandwich bread.
That’s right! This is a traditional Irish Soda Bread we’re making here. For one thing, this bread isbetter without egg and butter. Egg makes the bread less moist, and the butter made the crumb less tender (I made side by side versions just to be sure).
And this bread has enough flavour to eat plain with just lashings of butter so you don’t need extra flavourings like sugar and spices – though you can if you want.

In a medium bowl, combine the oats, buttermilk, oil, honey, and egg. Mix until well blended. Let the mixture sit for 20 minutes to hydrate.

Once the oat mixture has hydrated, stir it into the dry ingredients. Mix until just combined being careful not to overmix so that the bread will remain light. Add a bit more buttermilk if needed to create a loose batter. This measurement generally works for me though.
Transfer the batter into the prepared loaf pan. Sprinkle a few oats over the top of the batter. Bake in the preheated oven for 50 to 55 minutes or until raised and golden brown. Flour – The recipe calls for whole wheat flour and a little bit of regular all-purpose flour as well. You can change the ratio a little bit or even just use all wheat flour, but the bread will be even more dense at that point.
Baking soda and salt – Make sure your baking soda isn’t expired. If your baking soda is old, the bread may be a little more flat than you’re hoping for!

Molasses – Just a little bit of molasses, but it adds such a wonderful flavor to this bread. If you don’t have molasses, you can use honey instead. If you use honey, the color of the bread will be a little lighter as well.
Buttermilk – If you don’t have buttermilk on hand, you can make your own very easily! All you have to do is add 2 Tbsp of lemon juice or vinegar to 2 cups of regular milk and let it sit for about 10 minutes before adding to the recipe.
Mix in the molasses and buttermilk and stir until everything is moistened. Don’t stir the batter too much – you only want to stir just until everything is combined.

Pour the batter into a 9X5 bread pan that has been well greased. I like to use the non-stick baking spray that has flour in it with this bread recipe because it is stickier than regular yeast breads.
