Easy Gluten Free Bread Recipe Almond Flour

Thislow carb bread recipe with almond flourcame about somewhat by accident during my Sundayketo meal planning. I had been making the flattened version of my 4-ingredientalmond flour biscuitsto use for sandwiches each week, but I wanted to create an almond flour bread that is much closer to a traditional bread. This is one of the closest ways I’ve come to a carb-free bread loaf. Although almond flour bread is not quite as low in carbs as cloud bread or my white keto bread (both of which are lighter and fluffier), this one is a low carb gluten-free bread that has a taste and texture closer to a whole wheat variety. It even has a crusty exterior!

This one is one of my favorite low carb bread recipes for everything from toast to sandwiches — and will easily fit into your low-carb diet! I’ve been making it for years, but recently updated it to use a hand mixer and the results are even better (more on this below).

After dozens of tests, I only make this loaf with Wholesome Yum Blanched Almond Flour. That’s because its fine-milled texture makes each slice taste more authentic than other flours, all while keeping the carb count ultra low. You can truly taste the difference!

You can! Many of my readers in our low carb support group report you can make this almond flour bread recipe in a bread machine. If you want to use your bread machine, load the dough into your machine instead of a loaf pan and make sure to use the “Quick Bread” setting.

I’m so excited about how delicious and chewy this almond flour bread is! It’s one of my favorite low carb bread recipes, and I want it to be yours, too.

Almond flour just doesn’t work the same way as wheat flour. But, you can still do everything you can to help this bread rise:

Easy Gluten Free Oat Bread

Done before it actually is! And if you take it out too soon, it will fall and worse, it will be gummy inside. Here are 2 ways to test for doneness:

In general, err on the side of more time and not less. You can always cover the top if it starts to burn, though I’ve never had to do that.

Wrap low carb gluten-free bread in parchment paper, not plastic. Store on the counter for 3 to 4 days, or in the fridge for up to 1 week. It does get a little hard at the end, similar to wheat bread from the store (perfect for keto French toast or low carb croutons).

It will trap moisture and ruin the texture. If it gets a little damp or gummy with time, you can pop it in the toaster to fix that.

Yes, you can freeze low carb bread for 3-6 months. Slice and place on a parchment-lined baking sheet in a single layer. Once frozen solid, transfer your (almost) carb free bread slices to a freezer bag. (Alternatively, you can freeze in a freezer bag right away with pieces of parchment paper between the slices.) Reheat in the toaster.

This recipe was originally made in a 9×5 loaf pan, but I now recommend this size instead — it makes a taller loaf.

If you’ve been following this blog for a while, you’ll know how much I love homemade bread. In fact, over the last few years I’ve been experimenting with plenty of recipes and I’ve made so many different types of bread.

Nourishing Almond Flour Banana Bread (gluten Free!)

Mostly, I’ve made plenty of yeast bread – from this fluffy gluten-free white bread (that’s become a huge hit at home), to soft buckwheat bread, to soft gluten-free dinner rolls, to this gorgeous rosemary focaccia bread, and even this delicious gluten-free pizza crust.

While baking bread and watching the yeast work its magic as the dough miraculously doubles in size is usually very therapeutic for me, there are days when I’ve either:

On those days, I turn to baking a loaf of quick bread (which doesn’t include yeast and instead uses baking powder for leavening). A few favorite quick bread recipes on the blog include our easy honey oat bread, and this absolute best gluten-free banana bread.

Especially if you’re diabetic or insulin-resistant (and can’t risk your blood sugar spiking after just a few slices of bread), or simply prefer not to have to breathe in and hold your breath just to be able to pull on your favorite pair of high-waisted jeans.

You can simply replace the almond flour by making your own finely ground almonds (almond meal) at home! All you need is whole almonds, 5 minutes, a high-speed blender or food processor, and a fine-mesh sieve.

Add the dry ingredients (unsweetened shredded coconut, almond flour, salt and baking powder) to the bowl with the wet ingredients, whisking well until you get a liquid batter.

Healthy Paleo Gluten Free Sandwich Bread

Pour batter into the prepared loaf pan, and bake for 40 to 45 minutes, until golden brown on top and a toothpick inserted in the middle comes out clean.

Allow the almond flour bread to cool for at least 10 to 15 minutes in the pan, before running a butter knife or a spatula around the edges and removing the loaf from the pan. Finally, allow the gluten-free almond bread to finish cooling to room temperature on a wire rack.

To store, wrap the cooled almond bread inplastic wrapor place it in anairtight containerand then store in the refrigerator for up to 5 days.

To freeze, wrap the cooled almond bread inplastic wrapand freeze for up to 3 months. Let the frozen loaf thaw overnight in the refrigerator before warming it up slightly in the oven and then slicing.

Just bear in mind that almond meal will result in a darker bread since almond meal includes the reddish-brown almond skins, while blanched almond flour does not.

Yes, almond flour will rise with baking powder. However, given that almond flour is denser compared to normal flour, having a larger proportion of liquids/moisture in the batter (eggs in this case) will help the almond bread acquire a lighter and fluffier texture.

Coconut Oil: I always prefer to use refined coconut oil because it has a neutral taste (as opposed to extra virgin coconut oil that has a more pronounced coconut flavor and smell). You can also use another vegetable oil (such as olive oil, avocado oil, sunflower oil etc). Alternatively, if you are not lactose-intolerant, feel free to use butter or ghee in equal amounts.

Honey: I’ve used just a bit of honey in this recipe to lend a little sweetness to the bread. You can also use agave nectar or maple syrup if
