1 Mini Loaf Banana Bread Recipe

All you need is one ripe banana and you can enjoy a delicious loaf of the BEST Small Batch Banana Bread ever!

I’ve been making this banana bread recipe for over 40 years. Now that we are empty nesters and a reduced sized family I decided I needed to figure out a small batch banana bread using our favorite recipe. You can find the full size recipe here.

It worked perfect! This recipe has the same amazing flavor and texture as the full size recipe. The recipe makes one small loaf and it is the perfect amount for one or two if you want to share.

Sour Cream Banana Bread Recipe

Mix smashed banana, sugar and oil together and then add in egg yolk. Do not add in the whole egg or your banana bread will taste eggy.

After the bread has cooled, slice and enjoy. I love my warm banana bread with a little bit of butter on it. It is perfect for breakfast or a treat anytime.

It usually only lasts a day at our house, especially if making it in a small batch size. If you do end up with leftovers, store it in a zippered plastic bag or wrapped in plastic wrap and it will be good for 4 days. No need to refrigerate it. If it does dry out a bit just pop it in the toaster and it is wonderful toasted.

Place a paper towel in the bottom of an airtight storage container OR in an airtight plastic storage bag. Place the cooled loaf on top of it. The paper towel will absorb any excess moisture that may leak out over the next few days. Cover the top of the bread with another paper towel.

Be sure and cool banana bread first. Wrap the entire loaf or slices of bread in plastic wrap or foil. Place wrapped bread into a freezer storage bag. It will last for 3-4 months in the freezer. Thaw in the refrigerator or at room temperature.

You could absolutely make eight versions of the same banana bread, but I love knowing I can have eight different flavors in the same time it takes to bake one.

Most quickbread recipes are for one loaf, so I’ve made adjustments to allow for eight perfectly baked mini loaves (one regular recipe equals roughly three mini loaves). Like any quick bread, you’ll want to fill each cavity two-thirds of the way full to allow them enough room to rise.

The Best Banana Bread Recipe (ever.)

Size absolutely matters when you’re baking due to the depth of your pan and the thickness of your batter in the pan. Depending on the depth of your loaf pan, you may need to increase your bake time.

To play it safe, start to check on your loaves about 5 minutes before the end of their bake time to make sure they’re evenly baked and a nice toasty brown. All that banana bread babysitting will be worth it, I promise!

Over-mixing banana bread batter causes the gluten (which gives baked goods that fluffy elasticity) to overdevelop and become dense and gummy. Not two words we want associated with our mini banana bread loaves!

One Banana Banana Bread

Anytime you have one banana covered in brown spots, staring at you on the counter, I want you to think of me! I hope you have a mini loaf pan so you can make this, but if you don't, you can use the disposable mini loaf pans easily found in the baking aisle of the grocery store.

I also use mini loaf pans for storing make ahead mashed potatoes in the freezer for two people, too! The mini size is perfect for serving two people any side dish.

Because I have kids, I frequently have one banana that we all forgot about in the pantry. I love baking with one banana because it provides so much natural sweetness and moisture to any baked good! Mini Banana Bread Cakes

I scaled this recipe down from my Mom's Eggless Banana Bread , which uses almost melted butter, wheat germ and chopped pecans. Personally, I'm leery of banana bread recipes that don't use butter. Oil is great for moisture, but butter is better for flavor. The wheat germ is optional, just for bonus nutrition.

Another thing that this recipe has that many others lack is honey! My mom swears by honey in her banana bread recipe. She still uses regular sugar, too, but the honey brings a floral sweetness to this bread that I love! Plus, honey brings moisture to the batter!

Chocolate Chip Banana Bread Mini Loaves!

Isn't this mini banana bread loaf the cutest thing you've ever seen? It slices up into 6 mini slices, and I happen to think it makes the best breakfast for two. If you like sweet banana treats for breakfast, you might also like my peanut butter banana oatmeal cookies in the morning.

To store leftovers, first slice the loaf into thick slices. Place the slices flat in an air-tight container. They will keep for up to 2 days on the counter at room temperature. You can extend this to 4-5 days if you store them in the fridge. You can also freeze the slices for up to 3 months, and defrost them in the microwave as needed.

The batter from four mini loaf pans fit in one regular loaf pan. If your regular loaf pan is 9-inches, it requires 4 mini loaf pans worth of batter to fill.

Simply Perfect 2 Banana Banana Bread

While we love a dark brown and black banana for banana bread because they contain the most sugar, ensure your that your banana isn’t rotten. It should still smell like a banana and it should not be overly liquidy when cut open.

Mini loaf pans should be filling ¾ of the way full, typically. This recipe makes enough to fill one mini loaf pan, so the entire recipe goes in the pan.
